1. Slow Cooker Short Ribs

Slow Cooker Short Ribs
Source: thestayathomechef.com

Short ribs are a great cut of meat for the slow cooker because they’re tough and need to be cooked for a long time to become tender.

This recipe is adapted from a classic French dish called boeuf à la mode with a few American twists—the addition of potatoes and carrots, for example, and the use of beef broth instead of wine.

The result is a hearty, rustic stew that tastes like it took hours to make when in reality it’s ready in under three hours!

2. Crockpot Chicken and Dumplings

3. Crockpot Chicken Tortilla Soup

Crockpot Chicken Tortilla Soup
Source: spendwithpennies.com

This is one of my go-to recipes when I’m craving something really easy and satisfying.

It’s also super versatile—you can make it vegetarian or vegan by leaving out the chicken and adding more beans and veggies, or you can add meat if you’re partial to that sort of thing.

The recipe calls for chicken breasts, but feel free to substitute with any other cut of chicken if you prefer.

  1. Start by chopping up an onion and bell pepper, then throw them into the crockpot along with a handful of garlic cloves (I actually just buy pre-minced garlic).
  2. Add some chicken broth and tomatoes, then season with salt and pepper.
  3. Add in some corn tortillas, shredded cheese (I use cheddar), and green onions before cooking on low for 6 hours or high for 4 hours.
  4. When it’s done cooking, shred up your chicken breasts (they should fall apart easily) and mix them into the soup along with some fresh lime juice and cilantro.
  5. Serve hot!

4. Slow Cooker Chicken Cacciatore

Slow Cooker Chicken Cacciatore
Source: wellplated.com

This recipe uses chicken breasts instead of chicken thighs like most chicken cacciatore recipes do, which makes it healthier than some versions out there but still just as flavorful!

All you need to do is throw all the ingredients into your slow cooker (including mushrooms), set it on low heat for eight hours, then thicken the sauce with cornstarch or flour before serving over rice or pasta or however else you’d like!

5. Crockpot Beef and Broccoli

Crockpot Beef and Broccoli
Source: delish.com

This recipe is super easy, but it has a lot of flavor.

You can use a flank steak or a chuck roast, depending on what’s on sale where you are.

If you’re using flank steak, cut it into strips before placing it in your slow cooker; if you’re using chuck roast, just leave it as is.

Next, add in some sliced carrots and an onion that’s been cut into wedges.

You’ll want to put this all in your slow cooker with 2 cups of beef broth and 2 tablespoons of low-sodium soy sauce (you can also use regular soy sauce if that’s what you have).

Finally, add in 1 tablespoon of cornstarch dissolved in 3 tablespoons of water and stir everything together so that the sauce comes together nicely—it should be thick enough to coat all of the meat nicely when done cooking!

Cook on low for 6-8 hours until the meat is tender and cooked through.

50. Slow Cooker Chicken Pot Pie

I still remember the smell of my mom’s chicken pot pie wafting through the house when I was a kid.

It’s such a comfort food and it’s pretty easy to make in a crockpot.

The key to making a good pot pie is in the gravy – you want it to be nice and thick so that it coats all the ingredients and doesn’t make the pie too soggy.

I like to add a bit of cornstarch to mine to achieve that perfect consistency.

As for the filling, you can really use whatever vegetables you like or have on hand.

I usually go for a mix of carrots, peas, and potatoes.

And of course, don’t forget the chicken!

I like to use boneless, skinless thighs for this recipe because they stay moist and shredded chicken breasts can sometimes get a little dry.

This is a great recipe for a winter night when you want something warm and comforting but don’t want to spend hours in the kitchen.
