Here’s how I prefer to make these:

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Peel the sweet potatoes, cut into wedges and soak in cold water for 20 minutes.
  3. Remove from water and pat dry with kitchen towels or paper towels until completely dry.
  4. In a large bowl combine the sweet potatoes, corn starch and oil until well coated.
  5. In another bowl combine the spices and cayenne pepper (if using) then sprinkle over the sweet potatoes, tossing again until well coated.
  6. Line a baking sheet with parchment paper or foil (for easy clean up) and arrange the sweet potato wedges evenly on top, leaving room between each wedge so they don’t overcrowd one another.
  7. Bake for 25-30 minutes or until golden brown and crispy on the outside, flipping halfway through cooking time.

You can’t go wrong with a crisp green salad as a side dish with this elegant stuffed salmon.

You have complete latitude in your choice of greens, so you can opt for something mild, such as romaine or iceberg lettuce or a tender butterhead lettuce.

Or if you prefer something more assertive, you could use arugula, frisée, escarole, endive or radicchio.

If you wish to dress up the salad, add some fresh herbs, such as basil or tarragon leaves. Or use the classic French combination of garlic and mustard in the vinaigrette dressing.

To make it even more special, add pomegranate seeds or dried cranberries for color and flavor.

If you’d like to add a bit of fruitiness to the dressing, try orange-flavored balsamic vinegar as well.

For an extra touch of good taste, sprinkle a little gorgonzola cheese over the greens before drizzling on the vinaigrette.
