I used sweet potatoes instead of parsnips because that’s what I had on hand.
I didn’t have kale so I used spinach, but would recommend using kale if you can get your hands on some.
The ginger is a must-add as it adds an amazing flavor to this soup.

This soup was so unbelievably delicious!
I used vegan butter and a store-bought vegetable stock to make it vegan, and it still turned out amazing.
It had a nice creamy texture with lots of flavor from the vegetables, herbs, and chickpeas.
It didn’t take me that long to make either which was great.
I served it with some warm crusty bread 😋😋😋 and everyone in my family enjoyed it.

I love that it’s so simple to make, yet so incredibly flavorful.
