You can obviously add in whatever vegetables you have on hand, but I really liked the combination of flavors provided by the cashews, oregano, thyme, rosemary and chickpeas 🥙

The instructions were also clear and precise.

It took me about an hour from start to finish (not including soaking the cashews) and it fed my family of 4 with plenty left over for lunch.

I will definitely be making this creamy vegetable soup again soon!

I made this soup to help boost immunity in my family during the cold season, and it definitely did the trick🤗!

I used sweet potatoes instead of parsnips because that’s what I had on hand.

I didn’t have kale so I used spinach, but would recommend using kale if you can get your hands on some.

The ginger is a must-add as it adds an amazing flavor to this soup.

This was a hit with my family – none of us are big fans of lentils, however they were masked perfectly within this flavorful soup.

I used vegan butter and a store-bought vegetable stock to make it vegan, and it still turned out amazing.

It had a nice creamy texture with lots of flavor from the vegetables, herbs, and chickpeas.

I love that it’s so simple to make, yet so incredibly flavorful.

The texture of the potatoes and beans complimented each other perfectly, and the thyme gave such a nice warmth to the dish.

I added some smoked paprika for an extra punch of flavor, which worked really well too 🌶️

This definitely won’t be my last time making this recipe!

Will definitely try variations on it as well- maybe adding different spices or trying a different type of potato.
