I am not exaggerating when I say this dish took less than 20 minutes to make (including cooking the tortellini) and it was absolutely delicious.

If you’re in need of a quick, easy, and tasty meal, look no further than this Turkey Tortellini Toss!

Ingredients You’ll Need:

  • 1 package of ground turkey
  • 1 package of cheese tortellini
  • 1/2 cup of asiago cheese
  • 1 pint of cherry tomatoes
  • 1 zucchini
  • 2 tablespoons of olive oil
  • 1 teaspoon of oregano
  • 2 cloves of garlic
  • A pinch of chili flake

Instructions:

  1. Start by cooking the tortellini according to the package instructions.
  2. While the tortellini is cooking, heat up the olive oil in a large skillet over medium heat.
  3. Add the ground turkey to the skillet and cook until browned.
  4. Once the turkey is cooked through, add in the garlic, oregano, and chili flake.
  5. Cook for an additional minute.
  6. Add in the cherry tomatoes, zucchini, and asiago cheese.
  7. Cook for 3-5 minutes or until the vegetables are tender.
  8. Finally, add in the cooked tortellini and give everything a good toss.

3 Tips:

  • If you don’t have asiago cheese on hand, feel free to substitute with Parmesan or Pecorino Romano cheese.

So easy and so comforting, this Baked Tortellini Casserole is one of our family’s favorite recipes!

It’s filled with cheese tortellini, ground turkey, and a simple homemade tomato sauce.

Ingredients:

  • 1 pound ground turkey
  • 1 (19 ounce) package cheese tortellini
  • 1 (15 ounce) container ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 (24 ounce) jar tomato sauce
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning

Instructions:

  1. Preheat oven to 350 degrees.
  2. Spray a 9×13 inch baking dish with cooking spray.
  3. Cook the ground turkey in a large skillet over medium heat until browned.
  4. Drain any excess grease.
  5. Cook the tortellini according to package instructions.
  6. Drain.
  7. In a large bowl, mix together the cooked ground turkey, tortellini, ricotta cheese, mozzarella cheese, and tomato sauce.

I love pasta dishes because they’re filling, but still relatively light.

This recipe for cheese tortellini with ground turkey, spinach and zucchini marinara is one of my favorites.

It has everything I love in a meal: protein from the turkey, carbs from the tortellini, healthy fats from the cheese and cream, and veggies for some added nutrients.

Plus, it’s all covered in a delicious tomato sauce.

Here’s what you’ll need to make it:

  • 1 pound ground turkey
  • 1 package cheese tortellini
  • 1/4 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 1 zucchini, chopped
  • 2 tablespoons chopped basil
  • 2 tablespoons vegetable oil
  • 1 can diced tomatoes
  • 1 small onion, chopped
  • 1 teaspoon sugar

Instructions:

  1. In a large pot or Dutch oven, heat the oil over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the ground turkey and cook until browned, about 8 minutes.
  4. Drain any excess fat.
  5. Add the diced tomatoes, sugar, and basil and bring to a simmer.
  6. Let cook for 10 minutes.
  7. Add the cream and parmesan cheese and let cook for another 5 minutes.

  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cloves garlic, minced

Instructions:

  1. In a large pot, cook the ground turkey over medium heat until browned.
  2. Drain any fat and set the meat aside.
  3. Add the tortellini, chicken stock, zucchini, olive oil, oregano, baby greens, onion, tomatoes, and garlic to the pot.

3 Tips:

  • To make this soup even richer and more flavorful, try using Italian sausage instead of ground turkey.
  • Feel free to add more vegetables to the soup if you like – carrots or celery would work well too.

  • 1 carrot, finely chopped

  • 1/2 cup baby greens
  • 3 cloves garlic, minced

Instructions:

  1. In a large bowl, mix together ground turkey, tortellini, chicken broth, parmesan cheese, egg, celery, extra virgin olive oil, carrot, parsley, and baby greens.
  2. Shape mixture into small meatballs.
  3. In a large pot or Dutch oven over medium heat, sauté garlic in olive oil until fragrant.
  4. Add meatballs to the pot and cook until browned on all sides.
  5. Add chicken broth and bring to a simmer.

Tips:

  • If you want a heartier soup, you can add some diced potatoes when you sauté the garlic.
  • You can use any type of tortellini that you like. I like to use cheese tortellini, but you can also use spinach or mushroom tortellini.
  • This soup freezes well, so make a big batch and freeze some for later.

Tender cheese tortellini in a creamy white sauce (what we like to call an alfredo sauce) with earthy mushrooms, celery and peas.

All cooked in ONE pot for an easy meal the whole family will love – even the kiddos!

Ground turkey is used in this recipe to keep it light, but feel free to use whatever ground meat you have on hand.

Beef, pork, chicken, lamb, sausage… all would work great! If you want to make this vegetarian, leave out the meat altogether or use a plant-based ground “meat” like Beyond Meat or Impossible Burger.

This One Pot Turkey Mushroom Tortellini is easy enough for a weeknight meal, but impressive enough for company!

And if you have picky eaters, everyone can customize their bowl with their favorite toppings – shredded cheese, extra garlic, crushed red pepper flakes… the list goes on!

Ingredients You’ll Need:

  • 1 lb. ground turkey
  • 16 oz. package cheese tortellini
  • 4 cups chicken broth
  • 3 tablespoons flour
  • 1 cup milk
  • 8 oz. mushrooms, sliced
  • 1/2 cup celery, diced
  • 1/2 cup peas
  • 1 teaspoon curry powder
  • 1 teaspoon onion powder
  • 1 teaspoon thyme
  • 4 cloves garlic, minced

Instructions:

  1. In a large pot or dutch oven, cook the ground turkey over medium heat until browned.
  2. Drain any excess fat and remove from the pot.
  3. Add the tortellini, chicken broth, flour, milk, mushrooms, celery, peas, curry powder, onion powder, thyme and garlic to the pot.
  4. Stir until everything is well combined.
  5. Bring the mixture to a boil, reduce the heat to low and simmer for 15-20 minutes, or until the tortellini is cooked through.
  6. Serve in bowls and enjoy!

Tips:

  • If you want a thicker soup, remove 1 cup of the cooked tortellini before adding it back into the pot at the end.
  • For a little extra flavor (and fun!), top each bowl with shredded cheese and/or crushed red pepper flakes before serving.
  • Leftovers can be stored in an airtight container in the fridge for 3-4 days or in the freezer for 2-3 months.

  1. To make the meatballs, mix all of the ingredients together in a bowl and shape into about 24 small balls.
  2. Set aside.
  3. In a large pot or Dutch oven, bring the chicken broth and water to a boil.
  4. Add the tortellini and cook according to the package directions.
  5. While the tortellini is cooking, heat the olive oil in a large skillet over medium heat.
  6. Add the celery, carrots, onion, garlic, salt, and black pepper and cook until softened, about 5 minutes.
  7. Add the meatballs to the soup and simmer for 10 minutes.
  8. Stir in the baby greens and cook until wilted, about 2 minutes.
  9. Serve hot with some grated Parmesan on top. Enjoy!

Skinny Turkey Meatball Tortellini Soup

This one is perfect for when you crave a hearty, wholesome soup but don’t want all the calories that come along with it.

It’s also great for when you have leftover ground turkey to use up!

Ingredients:

  • 1 pound ground turkey
  • 1 package tortellini
  • 5 cups chicken broth
  • 1/4 cup bread crumbs
  • 1/4 cup grated parmesan cheese
  • 1 egg
  • 2 stalks celery, diced
  • 1 carrot, peeled and diced
  • 2 tablespoons chopped parsley
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 2 cups baby greens
  • 1 onion, diced
  • 3 cloves garlic, minced

Instructions:

  1. Heat the olive oil in a large soup pot over medium heat.
  2. Add the onion, garlic, celery and carrot.
  3. Cook until softened, stirring occasionally.
  4. Add the ground turkey and cook until browned.
  5. Drain any excess fat if necessary.
  6. Add the chicken broth, tortellini, bread crumbs, parmesan cheese, egg, parsley and oregano.
  7. Stir until well combined.
  8. Bring the soup to a boil, then reduce heat and simmer for about 10 minutes until the tortellini is cooked.
  9. Add the baby greens and cook for an additional minute until wilted.
  10. Serve hot with some extra grated parmesan on top if desired!

Tips:

  • If you want an even healthier version of this soup, use ground chicken instead of ground turkey. You could also use whole wheat bread crumbs and swap out the regular tortellini for a whole wheat or vegetable variety. Just make sure to adjust the cooking time accordingly since whole wheat pasta takes a bit longer to cook through. By doing these simple substitutions you can easily cut down on calories and carbs without sacrificing any flavor! And no one will ever know unless you tell them…
  • This soup can also be easily made in the crockpot! Just brown the meat and veggies in a pan on the stove first, then add everything else into your crockpot and set it on low for 6 hours or high for 3 hours. Easy peasy!
  • If you want a bit more of a protein punch, add some cooked Italian sausage to this soup! Just brown it along with the ground turkey (or chicken) during step one. You can also add in some extra veggies like zucchini or spinach for an extra nutritional boost!
