  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet with butter.
  2. In a large bowl, combine ground turkey, summer squash, zucchini, sweet potato, salt, and pepper.
  3. Mix well.
  4. Shape mixture into 24 small balls.

Instructions:

  1. In a large pot over medium heat, cook the ground turkey until browned.
  2. Add the squash, zucchini, beef broth, pinto beans, carrot, kidney beans, bell pepper, onion, and Italian seasoning.
  3. Bring to a boil. Reduce heat to low and simmer for 30 minutes.

  • 4-6 summer squash, halved lengthwise and seeded
  • 1/2 cup chicken broth
  • 1/2 cup dry bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 medium zucchini, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 cup chopped onion
  • 1 (14.5 ounce) can diced tomatoes, undrained

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet over medium heat, cook the turkey until browned.
  3. Drain any excess fat and set aside.
  4. Arrange the squash halves cut side up in a baking dish.
  5. Pour the chicken broth over the squash.

  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 red bell pepper, seeded and chopped
  • 2 tablespoons chili powder
  • 1 teaspoon onion powder

Instructions:

  1. In a large pot over medium heat, cook the ground turkey until browned.
  2. Add the summer squash, beef broth, celery, zucchini, jalapeno, black beans, bell pepper, chili powder, and onion powder.
  3. Bring to a simmer and cook for 10 minutes.
  4. Add the canned tomato and cook for 5 minutes more.
  5. Serve with shredded cheese and sour cream (optional).

3 Tips:

  • If you want a little extra protein in your chili, add kidney beans or pinto beans.
  • If you want a little less heat, remove the seeds from the jalapeno before adding it to the pot.
  • For a vegetarian option, substitute vegan ground “beef” crumbles for the ground turkey.

This dish is not only a great way to use up extra squash, but it is also lightened up by using ground turkey in place of ground beef, and seminola lasagna noodles in place of traditional lasagna noodles.

Ingredients:

  • 1 pound ground turkey
  • 3-4 cups summer squash, thinly sliced
  • 1/2 cup grated parmesan cheese
  • 1 cup ricotta cheese
  • 1 package seminola lasagna noodles
  • 1 1/2 cups mozzarella cheese, shredded
  • 2 tablespoons extra virgin olive oil
  • 1 onion, diced
  • 1 canned tomato, diced
  • Seasoned salt and italian seasoning, to taste

Instructions:

  1. Preheat oven to 375 degrees F.
  2. In a large saute pan, heat olive oil over medium high heat.
  3. Add onions and saute until translucent.
  4. Add ground turkey and brown until cooked through.
  5. Drain any excess fat and remove from heat.
  6. In a large pot of boiling water, cook lasagna noodles until al dente according to package instructions.
  7. Drain and rinse with cold water.
  8. To assemble the lasagna, spread 1/2 cup of the tomato sauce on the bottom of a 9×13 inch baking dish.
  9. Layer 5-6 noodles on top of the sauce (you may need to break them to fit), and then top with half of the turkey mixture and half of the summer squash slices.
  10. Sprinkle with salt and pepper.
  11. Repeat layering process one more time, ending with noodles on top.
  12. Spread remaining tomato sauce over top and sprinkle with mozzarella cheese and parmesan cheese.
  13. Bake for approximately 30 minutes, or until lasagna is bubbling and cheese is melted and golden brown.
  14. Let rest for 5-10 minutes before serving.

Tips:

  • If you have fresh basil, feel free to add a layer in between the noodles!
  • You could also use zucchini in place of, or in addition to, the summer squash.
  • To make things even easier, you could use a jar of your favorite tomato sauce in place of the canned tomato.

It’s a lightened-up version of the traditional shepherd’s pie, and it’s packed with loads of fresh veggies.

Trust me, your family will love this one!

Ingredients:

  • 1 pound ground turkey
  • 1 cup summer squash, diced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup celery, diced
  • 1/2 cup tomato sauce
  • 1/2 cup zucchini, diced
  • 1 teaspoon oregano
  • 1/2 cup green beans, diced
  • 1/2 onion, diced
  • 1 sweet potato, peeled and chopped into small pieces
  • 2 cloves garlic, minced
  • Seasoned salt to taste

Instructions:

  1. Preheat oven to 350 degrees.
  2. Spray a 9×13 inch baking dish with cooking spray. Set aside.
  3. In a large skillet over medium heat, cook ground turkey until browned. Drain any excess grease.

Almost every week, I keep chili in my fridge because it’s delicious, satisfying, and easy to make.

This particular recipe is my go-to because it has all of the classic chili flavors with a few fun twists.

The ground turkey and sweet potatoes make it hearty and filling, while the summer squash and bell peppers add some unexpected sweetness and crunch.

Trust me, this chili will become a weeknight staple in your house!

Ingredients You’ll Need:

  • 1 pound ground turkey
  • 1 small summer squash, diced
  • 1 teaspoon cumin
  • 1/2 cup tomato sauce
  • 1 teaspoon garlic powder
  • 1 can kidney beans, drained and rinsed
  • 1 jalapeno, diced
  • 1 teaspoon onion powder
  • 1 red bell pepper, diced
  • 1 tablespoon chili powder
  • 1/2 yellow onion, diced
  • 1 can diced tomatoes
  • 2 large sweet potatoes, peeled and diced into 1″ cubes
  • 1/4 teaspoon cayenne pepper

Instructions:

  1. In a large pot or Dutch oven over medium heat, cook the ground turkey until browned.
  2. Add the squash, cumin, tomato sauce, garlic powder, kidney beans, jalapeno, onion powder, bell pepper, chili powder, onion, and canned tomatoes.
  3. Stir until everything is evenly mixed and coated with the spices.
  4. Add the sweet potatoes and cayenne pepper.
  5. Stir again and bring to a simmer.
  6. Cover the pot with a lid and let simmer for 30 minutes or until the sweet potatoes are soft.

Tips:

  • I like to top my chili with shredded cheese and sour cream, but you could also garnish with green onions or chopped cilantro.
  • This chili freezes really well! I always make a big batch so I can have leftovers for busy nights. Just let it thaw in the fridge overnight before reheating on the stovetop or in the microwave.
  • If you want a little more heat, you could add another jalapeno or use hot diced tomatoes instead of regular diced tomatoes.

Ingredients You’ll Need:

  • 1 pound ground turkey
  • 1 summer squash, diced
  • 1 cup chicken stock
  • 1/2 cup sour cream
  • 1/2 cup cheddar cheese, shredded
  • 1 red onion, diced
  • 1 zucchini, diced
  • 1 carrot, diced
  • 1 can kidney beans, drained and rinsed
  • 1 bell pepper, diced
  • 2 tablespoons chili powder
  • 1 cup sweet corn
  • 1 can diced tomatoes
  • 2 chipotle peppers in adobo sauce, chopped
  • 2 tablespoons adobo sauce
  • 3 scallions, thinly sliced

Instructions:

  1. In a large pot or Dutch oven over medium heat, cook the ground turkey until browned.
  2. Add the squash, chicken stock, sour cream, cheddar cheese, red onion, zucchini, carrot, kidney beans, bell pepper, chili powder, sweet corn, canned tomatoes with their juices, and chopped chipotle peppers with adobo sauce.
  3. Bring the chili to a simmer and cook until the vegetables are tender and the flavors have melded together, about 30 minutes.
  4. Taste and adjust seasoning as necessary.
  5. Serve in bowls garnished with scallions and sour cream.

Tips:

  • If you like your chili on the spicier side, add an additional chipotle pepper or two.
  • Serve this chili over rice or quinoa for a heartier meal.
  • Turkey chili freezes well too – make a big batch and enjoy it all winter long!
