Large courgettes are such an incredible vegetable that it doesn’t even feel right calling them “cucumbers.” They are in a league of their own, so I thought I would include them on my list.

You’ve got your large courgettes from the supermarket, now what? Well, they’re great in a wide variety of recipes and can be used in countless ways.

Some of the best uses are recipes that combine a variety of different vegetables and a range of flavours, but a large courgette can also be used as a pizza topping or a side dish.

If you’ve only got one large courgette left in your refrigerator, here are 8 recipes to inspire you to make something with it. I’ve included the recipe links below.

1. Courgette Cake with Lemon Drizzle

I love this recipe for using up large courgettes, and it’s a great option if you’re looking for a light summer dessert or lunchtime treat.

You just need to preheat the oven, then roll the courgettes in flour and shake off any excess, followed by a light sprinkling of salt and pepper. Then just toss in a mix of dried cranberries, soft dates, toasted pecans, and sunflower seeds and bake them for around 25 minutes at 180°C/gas mark.

When they’re ready, leave them to cool, and then scatter with a generous drizzle of lemon juice and a dusting of icing sugar.

2. Pasta With Courgettes

This is a great dish for when you have large courgettes, and you want to make use of them all.

Just cook your courgettes in a saucepan for 10 minutes, drain them thoroughly, then toss them with a little olive oil and chopped garlic to make a simple pasta sauce. Serve it with some fresh basil leaves and parmesan cheese for added flavour.

Either way, you’ll be left with a sticky mess of aubergine and olive oil that is delicious served with breadsticks and garlic bread.

This is one of my absolute favourites to make, because it’s delicious, nutritious, and quick to prepare. It’s also a great way to make use of the abundance of courgettes that come into season at this time of year! Get chopping!

A simple and healthy dish to accompany a main course, this recipe features fresh, unpeeled large courgettes, a teaspoon of turmeric, a small amount of ginger, and some curry powder. It’s easy to make, and it gives your courgettes a great Indian twist.

If you don’t like spice, you can leave the ginger out, but I always recommend adding it if you can, as it adds so much flavour.

Here are a few ways to prepare them for your meals:

1. Stuffed Courgettes

If you’re using large courgettes, then you can stuff them with your favorite ingredients to make a quick and easy meal. You can use any type of filling you want – cheese, meat, pasta, beans, etc.

You can even stuff them with left over vegetables like potatoes or zucchini, which makes them even more versatile. You could even stuff them with a mixture of leftover meats, veggies, and cheeses. Just remember to drain off any excess liquid before you bake or cook them.

2. Curried Courgette Tartlets

You can also use large courgettes to make delicious curried tartlets. All you need to do is slice the courgettes lengthwise and then place them on the bottom of the tin.

Top each courgette with a small amount of curried chickpeas and then top it all with a layer of cheese. Bake them in a preheated oven for 20 minutes, or until they’re golden brown.

3. Sausage and Courgette Pie

If you’re feeling adventurous, you can also make sausage and courgette pie. You can either make your own pastry or use a ready-made one.

You can then fill it with your favorite ingredients – sausage, onions, tomatoes, etc. If you’re using a ready-made pastry, then make sure to add enough water to it so that it doesn’t dry out when it bakes.
