    4. Beat the egg in a small bowl. Add the remaining ½ cup of milk to the egg, mixing well. Temper the egg by slowly adding a few spoonfuls of the hot rice mixture to the egg, stirring continuously.

    5. Gradually pour the tempered egg-milk mixture back into the skillet, stirring constantly to prevent the egg from scrambling. Cook for another 2 to 3 minutes until well blended and creamy.

    6. Remove the skillet from heat. Add the vanilla extract and, if using, the golden raisins. Stir until everything is well combined.

    7. Let the rice pudding cool slightly before serving. Enjoy your delicious skillet rice pudding warm or chilled!

    Skillet Strawberry Shortcake

    Ingredients:

    • 2 cups all-purpose flour

    • 1/3 cup sugar

    • 1 tablespoon baking powder

    • 1/2 teaspoon salt

    • 1/2 cup cold butter, cubed

    • 1 cup buttermilk

    • 1 egg yolk

    • 1 teaspoon vanilla extract

    • 1 quart fresh strawberries, sliced

    • 1 tablespoon lemon juice

    • 2 tablespoons cornstarch

    • 1/4 cup honey

    Instructions:

    1. Preheat your oven to 400°F (200°C). Lightly grease a 10-inch cast iron skillet and line the bottom with a round of parchment paper.

    2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

    3. Add the cubed cold butter into the flour mixture. Use a pastry cutter or your fingers to mix until the butter pieces are pea-sized.

    4. In a separate bowl, whisk together the buttermilk, egg yolk, and vanilla extract.

    5. Pour the wet ingredients into the dry ingredients. Stir until just combined.

    6. In another bowl, toss the sliced strawberries with lemon juice, cornstarch, honey, and a bit of sugar if desired.

    7. Transfer the strawberry mixture into the prepared skillet. Spread it out evenly.

    8. Scoop the shortcake dough on top of the strawberries in small spoonfuls, leaving some gaps for the fruit to peek through.

    9. Bake in the preheated oven for about 25-30 minutes, until the shortcake is golden brown and the strawberries are bubbly.

    10. Let it cool slightly before serving. Enjoy warm with whipped cream or ice cream, if you like.
