Adding herbs to your lamb stew transforms the dish from a hunk of meat floating in a bland liquid to a flavorful stew of well-balanced flavors. In fact, adding herbs can give you the flavor you want without relying on salt or other spices. You just have to know which herbs are complementary and which ones aren't!Rosemary and thyme are both common additions to lamb stew, but they won't be good for it unless you use the right quantities. For instance, rosemary is very strong, so you only need about half an ounce for every pound of meat. Thyme, on the other hand, is much milder; add about two ounces for every pound of meat. If you've never cooked with rosemary before, it's easy to get overwhelmed by its powerful flavor. That's why I recommend starting with less than what I listed above and gradually adding more until you get used to how much works best for your taste buds.
