Ingredients

  • Add a slurry of cornstarch and water
  • Use a roux made from flour and butter
  • Blend some of the corn chowder and return it to the pot
  • Mix in instant mashed potato flakes
  • Stir in heavy cream or half-and-half
  • Add a can of creamed corn
  • Use a potato masher to mash some of the corn and potatoes
  • Mix in a can of refried beans
  • Add some breadcrumbs or cracker crumbs
  • Stir in a can of evaporated milk
  • Use a mixture of equal parts cornmeal and water
  • Add a dollop of sour cream
  • Mix in a can of condensed cream of mushroom soup
  • Add grated cheese and stir until melted
  • Use a stick blender to puree some of the corn and vegetables

Instructions

  • In a small bowl, mix together the cornstarch and cold water until the cornstarch is completely dissolved.
  • Make sure the corn chowder is hot and simmering on the stove.
  • Slowly pour the cornstarch mixture into the pot of chowder, stirring constantly with a whisk or spoon.
  • Continue stirring the chowder for about 1-2 minutes, until the cornstarch has thickened the chowder to the desired consistency.
  • If the chowder is still not thick enough, repeat the process with another batch of cornstarch and water.
  • Once the chowder has thickened to your liking, remove it from the heat and let it cool for a few minutes before serving.

Notes

Note: Be careful not to add too much cornstarch at once, as it can cause the chowder to become too thick or gummy. Start with a small amount and add more as needed. Additionally, cornstarch can make the chowder cloudy in appearance, so if you prefer a clear broth, try using another thickening method.
