This 15-Minute Pasta Meal is Quick & Easy

This creamy shrimp pasta is a quick and flavorful weeknight meal. Packed with protein and vegetables, it’s a satisfying dish that comes together in just minutes.
Ingredients
- 1 lb raw shrimp, peeled and deveined
- 12 oz pasta (rotini or your favorite)
- 8 oz cream cheese, softened
- 1 (10 oz) package fire roasted frozen vegetable medley, thawed
- 2 tbsp unsalted butter
- 2 tbsp sundried tomatoes in olive oil
- 1/4 cup Parmesan cheese, grated
- 1/2 tsp onion powder
- 1/2 tsp lemon pepper seasoning
- 1/2 tsp smoked paprika
- Salt, pepper, and garlic blend, to taste
- 1-2 tsp chicken bouillon powder (or salt)
- Italian seasoning herb blend, to taste
- Fresh parsley, chopped (for garnish)
- Crushed red pepper flakes (for garnish)
- 1 cup reserved pasta water

Step 1: Season the Shrimp
Season the shrimp with onion powder, lemon pepper, smoked paprika, salt, pepper, and garlic blend.

Step 2: Sauté the Vegetables
Heat the sundried tomatoes and olive oil in a large pan.

Add the thawed fire-roasted vegetables to the pan and sauté until thawed, seasoning with salt, pepper, and garlic blend.

Step 3: Cook the Pasta
Bring a pot of water to a boil. Add chicken bouillon powder (or salt).

Add the pasta to the boiling water (if using different types, add the one with the longer cook time first).

Step 4: Cook the Shrimp
Add butter to the pan with the vegetables.

Add the seasoned shrimp to the pan and cook until almost done, seasoning with additional salt, pepper, and garlic blend.

Step 5: Make the Creamy Sauce
Create a space in the center of the pan and add the softened cream cheese. Stir until melted and creamy.

Step 6: Combine Pasta and Sauce
Add the remaining pasta to the boiling water (if applicable).

Once cooked, drain the pasta and add it to the pan with the creamy shrimp and vegetables. Stir to combine.

Step 7: Final Seasoning and Serving
Season the pasta mixture to taste with Italian seasoning and additional salt, pepper, garlic powder, or paprika as needed.

Stir in Parmesan cheese.

Serve the pasta garnished with fresh parsley and crushed red pepper flakes. If the sauce is too thick, add reserved pasta water until desired consistency is reached.
