Ingredients

For the Crust:
- 1⅓ cups all-purpose flour (181g)
- ¼ teaspoon baking soda
- 1 cup graham cracker crumbs (142g), divided
- ½ cup salted butter (113g), room temperature
- ¼ cup brown sugar (53g)
- ½ cup granulated sugar (100g)
- ½ teaspoon kosher salt
- 1 large egg (50g), room temperature
- 1 teaspoon pure vanilla extract (4g)
For the Topping:
- 1¼ cups milk chocolate chips (213g), divided
- 2½ cups mini marshmallows (108g)
- Chocolate sauce for drizzling (optional)

Steps

- Preheat oven to 350°F (175°C). Thoroughly coat a 13-inch deep-dish pizza pan with nonstick spray, ensuring complete coverage to prevent sticking.
- In a medium bowl, whisk together the flour, baking soda, and ¾ cup graham cracker crumbs until well combined. The remaining crumbs will be used for topping.
- Using a stand mixer with paddle attachment, cream butter, both sugars, and salt for 3-4 minutes until light and fluffy. The mixture should be pale in color and noticeably increased in volume.
- Add egg and vanilla, mixing until completely incorporated (about 1 minute). Scrape down sides as needed.
- Gradually add dry ingredients on low speed, mixing just until combined. Don’t overmix or your crust will be tough.
- Press dough evenly into prepared pan, using your palms for even pressure. The layer should be about ¼ inch thick throughout.
- Pierce dough 20-25 times with a fork to prevent bubbling during baking.
- Bake for 8-10 minutes until edges are lightly golden and center is set. The crust should spring back slightly when touched.
- Remove from oven and immediately sprinkle 1 cup chocolate chips over hot crust, leaving a ½-inch border for the “pizza crust” effect.
- Wait 3-4 minutes for chips to soften, then spread into an even layer using the back of a spoon.
- Sprinkle remaining ¼ cup graham crumbs, then add marshmallows and remaining chocolate chips.
- Broil on HIGH for 1-3 minutes until marshmallows are golden brown. Watch constantly to prevent burning.
- Let cool for 5 minutes before drizzling with chocolate sauce and slicing into 8 pieces.
