  • 1⅓ cups all-purpose flour (181g)
  • ¼ teaspoon baking soda
  • 1 cup graham cracker crumbs (142g), divided
  • ½ cup salted butter (113g), room temperature
  • ¼ cup brown sugar (53g)
  • ½ cup granulated sugar (100g)
  • ½ teaspoon kosher salt
  • 1 large egg (50g), room temperature
  • 1 teaspoon pure vanilla extract (4g)

For the Topping:

  • 1¼ cups milk chocolate chips (213g), divided
  • 2½ cups mini marshmallows (108g)
  • Chocolate sauce for drizzling (optional)

Steps

  1. Preheat oven to 350°F (175°C). Thoroughly coat a 13-inch deep-dish pizza pan with nonstick spray, ensuring complete coverage to prevent sticking.
  2. In a medium bowl, whisk together the flour, baking soda, and ¾ cup graham cracker crumbs until well combined. The remaining crumbs will be used for topping.
  3. Using a stand mixer with paddle attachment, cream butter, both sugars, and salt for 3-4 minutes until light and fluffy. The mixture should be pale in color and noticeably increased in volume.
  4. Add egg and vanilla, mixing until completely incorporated (about 1 minute). Scrape down sides as needed.
  5. Gradually add dry ingredients on low speed, mixing just until combined. Don’t overmix or your crust will be tough.
  6. Press dough evenly into prepared pan, using your palms for even pressure. The layer should be about ¼ inch thick throughout.
  7. Pierce dough 20-25 times with a fork to prevent bubbling during baking.
  8. Bake for 8-10 minutes until edges are lightly golden and center is set. The crust should spring back slightly when touched.
  9. Remove from oven and immediately sprinkle 1 cup chocolate chips over hot crust, leaving a ½-inch border for the “pizza crust” effect.
  10. Wait 3-4 minutes for chips to soften, then spread into an even layer using the back of a spoon.
  11. Sprinkle remaining ¼ cup graham crumbs, then add marshmallows and remaining chocolate chips.
  12. Broil on HIGH for 1-3 minutes until marshmallows are golden brown. Watch constantly to prevent burning.
  13. Let cool for 5 minutes before drizzling with chocolate sauce and slicing into 8 pieces.
