  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 ¼ cup grated cheddar cheese
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon onion powder
  • Salt and pepper to taste

Instructions


  1. Melt the butter in a saucepan over medium heat.



  2. Add the flour and whisk continuously until it forms a smooth paste, about 1-2 minutes.



  3. Slowly add the milk in small splashes, whisking constantly to avoid lumps.



  4. Bring the mixture to a gentle boil, then reduce to a simmer until it thickens.



  5. Lower the heat and gradually sprinkle in the cheddar cheese, whisking until melted.



  6. Stir in the Parmesan cheese and onion powder.



  7. Season with salt and pepper to taste, stirring until fully combined.



  8. Serve warm over your broccoli.


Garlic Sauce

Ingredients:

  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon sugar
  • 1/4 cup vegetable or chicken stock
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground white pepper
  • 2 tablespoons vegetable oil
  • 3-4 cloves of garlic, minced
  • 1 pound broccoli, cut into florets
  • 2 tablespoons Shaoxing rice wine (optional)

Instructions:


  1. In a small bowl, mix the soy sauce, rice wine vinegar, sugar, stock, sesame oil, and ground white pepper. Set aside.



  2. Heat a wok or large pan over high heat. Add the vegetable oil.



  3. Once the oil is hot, add the minced garlic. Stir-fry quickly to avoid burning, about 15 seconds.



  4. Add the broccoli florets to the wok. Stir-fry with the garlic for another 15-30 seconds.



  5. Pour the Shaoxing rice wine around the perimeter of the wok, if using.



  6. Add the sauce mixture to the wok. Stir well to coat the broccoli. Cook for 1-2 minutes until the broccoli is tender and the sauce thickens slightly.



  7. Remove from heat and serve immediately.


Peanut Sauce

Ingredients

  • 1/2 cup peanut butter
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce or coconut aminos
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon ginger, grated
  • 1/2 teaspoon chili pepper flakes
  • 1/4 cup water

Instructions

  1. Whisk together the peanut butter, minced garlic, soy sauce, honey, rice vinegar, grated ginger, and chili pepper flakes in a medium bowl.
  2. Slowly add the water, whisking constantly, until the sauce is smooth and has a pourable consistency. Add more water if needed.
  3. Serve the sauce over cooked or steamed broccoli, and enjoy!

Lemon Butter Sauce

Ingredients

  • 1 ½ cups broccoli florets
  • 2 tablespoons butter
  • Juice of 1 lemon
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and pepper to taste

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the lemon juice, cayenne pepper (if using), salt, and pepper to the skillet. Stir to combine.
  3. Bring the mixture to a simmer.
  4. Add the broccoli to the pan and stir to coat with the lemon butter sauce.
  5. Cover with a lid and cook for 10 to 15 minutes over medium-low heat, stirring once or twice, until the broccoli is tender but still bright green.

Teriyaki Sauce

Ingredients:

  • 1/4 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons honey or sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame seeds (optional)

Instructions:

  1. In a small bowl, mix the soy sauce, water, honey (or sugar), rice vinegar, garlic, and ginger.
  2. In another bowl, dissolve the cornstarch in the cold water.
  3. Heat the soy sauce mixture in a saucepan over medium heat until it starts to simmer.
  4. Stir the cornstarch mixture into the saucepan.
  5. Continue to cook, stirring constantly, until the sauce thickens.
  6. Add sesame seeds if desired.
  7. Remove from heat and let cool. Use immediately or store in the fridge for later.

Bearnaise Sauce

Ingredients:

  • 1/4 cup white wine vinegar
  • 1/4 cup white wine
  • 2 tablespoons finely chopped shallots
  • 1 tablespoon fresh tarragon, chopped
  • 3 large egg yolks
  • 1/2 cup unsalted butter, melted
  • Salt and pepper to taste

Instructions:

  1. Combine vinegar, wine, shallots, and tarragon in a small saucepan.
  2. Simmer until the liquid reduces to about 2-3 tablespoons. Let it cool.
  3. Transfer cooled mixture to a blender. Add egg yolks.
  4. Blend until smooth.
  5. With the blender running, slowly pour in melted butter.

Outback Ranch Dressing

Ingredients

  • Mayonnaise
  • Buttermilk
  • Ranch dressing mix
  • Garlic powder

Instructions

  • 1/4 cup red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Salt and pepper, to taste

Instructions


  1. Combine Parsley and Cilantro: Place the chopped parsley and cilantro in a blender or food processor.



  2. Add Garlic and Seasonings: Add the minced garlic, dried oregano, and red pepper flakes to the mix.



  3. Blend with Vinegar: Pour in the red wine vinegar and pulse until the mixture is finely chopped but not yet smooth.



  4. Slowly Add Olive Oil: With the blender running on low, slowly pour in the olive oil until the sauce is well combined. You can also mix the oil manually by stirring if you prefer a more rustic texture.



  5. Adjust Seasonings: Taste the sauce and season with salt and pepper. Blend briefly to incorporate the seasoning.



  6. Serve or Store: Use immediately or store in an airtight container in the refrigerator. It will keep for several days.

Ingredients:

  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon raw honey, melted

  • 1 teaspoon sesame oil
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions:

  1. In a small saucepan, add soy sauce, honey, brown sugar, minced garlic, and rice vinegar. Whisk to combine.
  2. Heat the saucepan over medium heat, stirring occasionally until the mixture starts to simmer.
  3. In a small bowl, combine water and cornstarch. Stir until the cornstarch is fully dissolved.
  4. Add the cornstarch mixture to the saucepan and stir well.
  5. Continue cooking until the sauce thickens, about 2-3 minutes.
  6. Remove from heat and stir in the sesame oil.

Creamy Vegan Broccoli Sauce

Ingredients:

  • 2 cups broccoli florets
