Get ready to roll up some fun with these vibrant Rainbow Spring Rolls that’ll have your kiddos begging for seconds.
A Colorful Culinary Adventure
Imagine your child’s eyes widening as they see a plate of what looks like edible rainbows.
That’s the magic of these Rainbow Spring Rolls!
They’re so pretty, your kids might forget they’re actually eating vegetables. Sneaky, right?
Ingredients
- 7-8 rice spring roll papers
- 1 medium beet, finely grated
- 1/2 yellow and red pepper, thinly sliced
- 1 cup carrots, thinly sliced
- 1 ripe mango, cubed
- 1 large bunch mint leaves
- 1 large bunch cilantro
- Optional: 8 ounces extra-firm tofu or cooked vermicelli noodles
The Rainbow-Making Process

Prep all your veggies and set them aside. Think of it as arranging your paint palette!

Boil some water and let it cool slightly. This is for softening your rice papers.

Dip a rice paper in the warm water for 10-20 seconds. Be careful not to leave it too long, or you’ll have a floppy mess!

Lay the softened rice paper on a damp surface and start creating your masterpiece.

Add a little of each colorful ingredient in a line across the center of the paper.

Fold the bottom over the fillings, then the sides, and roll it up like a tiny, veggie-filled burrito.

Repeat until you’ve used up all your ingredients. You should end up with about 7-8 rolls.
The Secret Sauce
What’s a rainbow without a pot of gold at the end? In this case, our “gold” is a delicious ginger peanut sauce!
Ginger Peanut Sauce Ingredients:
- 1/2 cup salted natural peanut or almond butter
- 1 1/2 Tbsp soy sauce
- 2-3 Tbsp brown sugar or maple syrup
- Juice from 1/2 a lime
- 1/2 tsp chili garlic sauce
- 1/2 tsp fresh grated ginger
- Hot water to thin
Mix all ingredients except water in a bowl. Add hot water gradually until you reach a pourable but thick consistency.
The Mango Mystery
Here’s a little secret: while mango makes these rolls extra delicious, its acidity can eat through the rice paper if left overnight.
So if you’re meal prepping, leave out the mango. It’ll be our little culinary science experiment!
