Quick and Easy Open-Faced Roast Beef Sandwich

This recipe demonstrates how to make a diner-style open-faced roast beef sandwich complete with mashed potatoes and gravy.
It’s a quick, easy, and satisfying meal perfect for any occasion.
Ingredients
- 2 Hormel roast beef in au jus
- Potatoes (about 8 medium)
- Texas toast style bread
- Beef broth (or bouillon cube)
- Butter
- Heavy cream
- Cornstarch (or flour)
- Salt
- Pepper
- Water
Preparing the Potatoes
Wash the potatoes.
Peel the potatoes.
Wash the peeled potatoes.
Cut the potatoes into smaller chunks.
Cooking the Potatoes
Place the potatoes in a pot and fill with water about 2 inches above the potatoes.
Place the pot on the stove on medium heat to cook.
Check the potatoes for doneness, ensuring they are easily mashed.
Drain the potatoes.
Mashing the Potatoes
Mash the potatoes with a potato masher.
Use a hand mixer to blend the potatoes further.
Add a stick of butter and about half a teaspoon of salt to the potatoes.
Blend the potatoes with the hand mixer.
Add heavy cream to the potatoes, stirring and blending until desired consistency is reached.
Preparing the Roast Beef
Remove the roast beef from the packaging.
Microwave the roast beef for about 4-4.5 minutes.
Drain the liquid from the roast beef into a cup.
Making the Gravy
Add 1/4 to 1/2 cup of beef broth and 1/2 cup of water to the roast beef juices.
Pour the liquid mixture into a pan, reserving a small amount in a bowl.
Shred the roast beef with two forks.
Turn up the heat under the pan to bring the liquid to a boil.
Add some of the hot liquid to the reserved juices in the bowl.
Add 1.5-2 tablespoons of cornstarch to the bowl and mix until there are no lumps.
Pour the cornstarch mixture into the pan and stir constantly until thickened.
If the gravy becomes too thick, add a little water.
Assembling the Sandwich
Slice down each corner of the Texas toast and cut in half.
Spread mashed potatoes on each piece of bread.
Place the bread slices together to form an open-faced sandwich.
Add more mashed potatoes on top of the bread.
Make a well in the center of the mashed potatoes.
Add the shredded roast beef to the gravy or directly to the sandwich.
Spoon the gravy over the roast beef and mashed potatoes.
