Let’s dive into the ingredients and how to whip up this delightful dish!
Ingredients Needed
- 5 medium gold potatoes, cut into bite-sized pieces
- 2 tablespoons olive oil (for potatoes)
- Salt and black pepper, to taste
- 2 tablespoons olive oil (for sauce)
- ½ cup honey
- 6 cloves garlic, minced
- ¼ cup soy sauce
- 4 tablespoons brown sugar
- 2 tablespoons Dijon mustard
- 6 large bone-in, skin-on chicken thighs
- 2 tablespoons butter, sliced
- 2 cups broccoli, cut into florets
Step 1: Prepare the Potatoes
Start by cutting each potato into six or eight bite-sized pieces. Make sure the cuts are equally sized so they cook evenly.

Once the potatoes are cut, transfer them into a large baking pan. Drizzle 2 tablespoons of olive oil all over the potatoes.

Season generously with salt and black pepper to taste, and mix everything together until well coated.

Arrange the potatoes in a single layer on the baking pan.

Preheat your oven to 400°F (200°C) and place the potatoes in the oven to roast for 25 minutes.

Step 2: Make the Honey Garlic Sauce
While the potatoes are roasting, let’s prepare the honey garlic sauce. In a bowl, combine 2 tablespoons of olive oil.

Add ½ cup of honey to the bowl, followed by 6 cloves of minced garlic.

Next, pour in ¼ cup of soy sauce, followed by 4 tablespoons of brown sugar.

Finally, mix in 2 tablespoons of Dijon mustard, and stir everything together until well combined. Set aside for later.

Step 3: Assemble the Dish
Once the potatoes have partially roasted, remove them from the oven. Now it’s time to add the chicken thighs.

Place the chicken thighs directly over the potatoes. This will allow the flavors to meld beautifully.

Now pour the honey garlic sauce over both the chicken and the potatoes.

To enhance the flavor, slice 2 tablespoons of butter and place a slice on top of each chicken thigh.

Return the pan to the oven and bake for 30 minutes.

Step 4: Add the Broccoli
After 30 minutes, take the dish out of the oven. It’s time to add the broccoli!

Add about 2 cups of broccoli florets to the pan, distributing them evenly.

Using a baster, baste the chicken and broccoli with the honey garlic sauce to ensure they are well coated.

Return the pan to the oven and continue baking for an additional 20 to 25 minutes, or until the broccoli is tender.

Step 5: Serve and Enjoy!
Once everything is cooked through, remove the pan from the oven. The aroma is absolutely delightful!

The chicken should be juicy and tender, and the potatoes will have soaked up all that delicious honey garlic sauce.

Serve this cozy, delicious meal warm and enjoy the flavors that blend so beautifully together.
