Mexican-Style Chicken and Rice (Arroz con Pollo) for Two

Ingredients

- 2 lbs chicken wings
- 1 tsp Kinder’s The Blend seasoning
- 1 tsp Montreal chicken seasoning
- 1/2 tsp paprika
For the Rice:
- 1/2 cup long-grain rice
- 1/2 medium onion, diced
- 2 cloves garlic, chopped
- 8 oz tomato sauce
- 8 oz chicken broth
- 1 tsp chicken bouillon powder
- 1/2 tsp ground cumin
- 1/4 tsp cracked black pepper
- 2 Tbsp cooking oil
For Garnish:
- Fresh parsley, chopped

Step 1: Prepare the Chicken
Cut off wing tips from chicken wings (optional)

Season chicken wings with Kinder’s The Blend, Montreal seasoning, and paprika

Step 2: Brown the Chicken
Heat cooking oil in a pan over medium-high heat

Brown chicken wings on all sides for 10-12 minutes


Remove chicken from pan and set aside

Step 3: Prepare the Rice Base
Rinse rice in cold water
Add rice to the same pan with remaining oil and fond

Toast rice until golden and fragrant, reducing heat to prevent burning

Add diced onion and continue sautéing

Add ground cumin

Add chopped garlic and sauté for another minute

Step 4: Add Liquids and Seasonings
Pour in tomato sauce and stir

Add chicken broth

Season with cracked pepper and chicken bouillon powder

Taste and adjust seasonings as needed

Step 5: Final Cooking
Return chicken wings to pan and arrange them evenly

Add any remaining juices from the chicken bowl

Cover with lid and reduce heat

Simmer for 15-18 minutes without lifting the lid
