Ingredients
- 4 cups (580 grams) all-purpose flour
- 1/2 cup (107 grams) granulated sugar
- 3/4 teaspoon (6 grams) fine sea salt
- 1/3 cup (84 grams) unsalted softened butter
- 1 cup (235 grams) lukewarm whole milk (around 100°F)
- 2 1/4 teaspoons (7 grams) instant yeast
- 2 whole eggs + 1 egg yolk
- 1 cup (225 grams) brown sugar
- 1 tablespoon (14 grams) Muscovado sugar (optional)
- 2 1/2 tablespoons (17 grams) ground cinnamon
- 1/3 cup (84 grams) unsalted softened butter (for spreading)
- For the glaze:
- 4 ounces (115 grams) cream cheese
- 3/4 cup (90 grams) powdered sugar
- 3 tablespoons (45 milliliters) whole milk
- Half of a vanilla bean (for flavor)
Step 1: Prepare the Dough
Start with a medium-sized bowl. Add the flour, sugar, and salt.
