Making Cinnabon Cinnamon Rolls at Home – But Better!

  • 2 1/4 teaspoons (7 grams) instant yeast
  • 2 whole eggs + 1 egg yolk
  • 1 cup (225 grams) brown sugar
  • 1 tablespoon (14 grams) Muscovado sugar (optional)
  • 2 1/2 tablespoons (17 grams) ground cinnamon
  • 1/3 cup (84 grams) unsalted softened butter (for spreading)
  • For the glaze:

  • 3/4 cup (90 grams) powdered sugar
  • 3 tablespoons (45 milliliters) whole milk
  • Half of a vanilla bean (for flavor)

Step 1: Prepare the Dough
