  • 12 oz lasagna noodles
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded mozzarella, divided
  • 1/4 cup grated Parmesan
  • 1 large egg
  • 1/4 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 10 oz frozen spinach, thawed
  • 1 (24 oz) jar pasta sauce

Steps

  1. Preheat oven to 400°F (200°C). Bring a large pot of water to a rapid boil over high heat. Add 1 tsp salt and lasagna noodles. Cook until just al dente, about 8-9 minutes – test by lifting a noodle with tongs; it should be flexible but still slightly firm. Immediately drain in a colander and lay flat to prevent sticking.
  2. While noodles cook, thoroughly drain thawed spinach by squeezing in clean kitchen towel until no more liquid comes out (excess water will make filling runny). Combine squeezed spinach, ricotta, 1 cup mozzarella, Parmesan, egg, salt and pepper in large bowl until evenly mixed.
  3. Once noodles are cool enough to handle but still warm (about 5 minutes), lay them flat on clean work surface. Spread 1/4 cup filling on each noodle, edge to edge. Roll up from short end, keeping roll snug but not too tight. Place seam-side down in 9×13-inch baking dish. You should get about 16 rolls.
  4. Pour sauce evenly over rolls, making sure to cover all exposed pasta to prevent drying. Top with remaining 1 cup mozzarella. Cover tightly with foil (don’t let it touch cheese).
  5. Bake covered at 400°F (200°C) for 30 minutes. Look for sauce bubbling at edges and cheese fully melted. Let rest 5-10 minutes before serving to set filling.
