Steps

Jambalaya with Andouille Sausage
  1. Heat 2 tsp olive oil in a 5 qt pot over medium-high heat until shimmering (about 2 minutes).
  2. Add sliced andouille in a single layer (work in batches if needed) and sauté until deeply browned, about 2-3 minutes per side. You want good caramelization here – it’s where the flavor magic happens!
  3. Remove sausage to a plate, leaving the flavorful drippings behind.
  4. Reduce heat to medium and add 1 tbsp butter. Once melted, add your trinity (celery, peppers, onions). Season with 1/4 tsp pepper.
  5. Add creole seasoning and bay leaves. Sauté for 8 minutes, stirring occasionally, until vegetables are soft and onions are translucent.
  6. Add garlic and sauté for 1-2 minutes until fragrant but not browned (burnt garlic = bitter jambalaya).
  7. Pour in 1/2 cup white wine, scraping the bottom of the pot to release any browned bits – this is pure flavor!
  8. Stir in tomato paste until vegetables are well-coated, about 1 minute.
  9. Add tomatoes, Worcestershire, and hot sauce, stirring to combine.
  10. Incorporate rice, stirring until each grain is coated with the vegetable mixture.
  11. Add chicken stock and remaining 3/4 tsp pepper. Increase heat to high and bring to a boil.
  12. Reduce heat to maintain a gentle simmer, cover, and cook for 15 minutes, stirring every 5 minutes to prevent sticking.
  13. Return sausage to pot, cover, and simmer for final 5 minutes until heated through. Rice should be tender but not mushy.
  14. Stir in fresh parsley just before serving. The rice should be slightly wet but not soupy.
