Homemade McRib Sandwich with Slow Cooker Ribs

This homemade version of the famous McRib sandwich features tender, slow-cooked baby back ribs slathered in barbecue sauce.
The combination of perfectly seasoned meat, crispy bread, crunchy onions, and tangy pickles creates a sandwich that rivals the original fast-food favorite.
Ingredients
For the Ribs:
- 3-4 lbs baby back pork ribs, membrane removed
- 1/4 cup barbecue rub
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 1 cup barbecue sauce
For Assembly:
- 4 bolillo rolls
- Sliced white onions
- Dill pickle slices
- Water (for bread crisping)

Step 1: Prepare and Season the Ribs
Remove the silver skin (membrane) from the back of the ribs.

Season both sides of ribs with salt, black pepper, and barbecue rub, patting the seasonings into the meat.

Step 2: Slow Cook the Ribs
Place the seasoned ribs in the slow cooker.

Cook on high for 3-4 hours until meat is tender and bones can be easily removed.

Step 3: Prepare the Meat
Remove bones from the tender rib meat.

Coat the deboned meat thoroughly with barbecue sauce.

Step 4: Prepare the Bread
Quickly dunk the exterior of bolillo rolls in water.

Air fry at 400°F for 3 minutes until crusty on the outside.

Step 5: Assemble the Sandwich
Slice the crusty rolls and arrange portions of the sauced rib meat on the bottom bun.

Top with sliced onions and dill pickles.
