- ½ cup (112 g) mayonnaise
- ¼ cup (60 g) crème fraîche
- 1 tbsp (8 g) smoked paprika
- 1 tbsp (9 g) garlic powder
- 2 ½ tbsp (37 g) sriracha
- 2 tsp (7 g) Worcestershire sauce
- Eggs
- 1 ½ tbsp (20 g) unsalted butter, per egg

- Aged cheddar cheese

Making the English Muffins
Whisk together warm milk, yeast, and sugar.

Let sit for 5 minutes until frothy.

Combine flour and salt in a stand mixer bowl.

Add the yeast mixture to the dry ingredients.

Add melted butter and egg to the mixer.

Mix with the dough hook until a smooth dough forms.

Lightly grease a bowl and place the dough inside.

Cover and let rise for 1 hour, or until doubled.

Punch down the dough and divide into 15 pieces.

Shape each piece into a ball.

Place dough balls on a cornmeal-dusted surface, cover, and let rest for 10 minutes.
