Ingredients
- 4 medium zucchini
- 1 pound ground turkey
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 green pepper, diced

- Salt and pepper to taste
- 1/2 cup grated parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Cut the zucchini in half lengthwise and scoop out the flesh with a spoon. Chop the scooped-out flesh into small pieces and set aside.
Place the zucchini halves cut-side down on the baking sheet. Bake for about 15 minutes, then let them cool.
Heat olive oil in a large skillet over medium-high heat. Sauté the onion, garlic, and green pepper until soft.

Instructions:
- Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray.
- Cook the lasagna noodles in a large pot of boiling salted water until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 5 minutes.
- Add ground turkey to the skillet. Break it up as it cooks until no longer pink. Stir in minced garlic and cook for another minute.
- Pour the marinara sauce into the skillet. Season with salt and pepper to taste. Let it simmer for 10 minutes.
- In a bowl, mix ricotta cheese with the egg until well combined.

- 1/2 teaspoon chili sauce (optional)
- 1/4 cup chopped scallions
- 1 tablespoon sesame seeds for garnish
Instructions:
- Heat oil in a large skillet over medium-high heat.

Ingredients:
- 1 lb ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 2 cups enchilada sauce
- 1 cup sour cream
- 8 large flour tortillas
- 2 cups shredded cheese
- 2 tablespoons olive oil
Instructions:
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and cook for 3-4 minutes until softened.
- Stir in the garlic and cook for 30 seconds more.
- Add the ground turkey to the skillet and cook until fully cooked, breaking it up as it cooks.
- Drain any excess grease from the skillet.
- Mix in the taco seasoning and cook for another minute.
- In a medium bowl, whisk together 2 cups of enchilada sauce and 1 cup of sour cream.
- Spread 1 cup of the enchilada sauce mixture on the bottom of a 9×13 inch baking dish.
- Place about 3/4 cup of the turkey mixture down the center of each tortilla.
- Roll up each tortilla and place it seam-side down in the baking dish.
- Pour the remaining enchilada sauce mixture over the rolled tortillas.
- Sprinkle the shredded cheese evenly over the top.
- Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.

Ingredients
- 4 large portobello mushroom caps
- 1 lb ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup fresh spinach, chopped (or kale)
- 1 egg
- 1/4 cup almond flour
- 1/2 cup shredded cheese (optional)
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Clean and dry the portobello mushroom caps. Place them cap side down on the baking sheet.
- In a large bowl, combine the ground turkey, onion, garlic, spinach, egg, almond flour, oregano, basil, salt, and pepper.

- Form the mixture into four equal balls. Place each ball into a mushroom cap, pressing down to fill the cap evenly.
