Ingredients

  • 4 bell peppers
  • 1 pound ground turkey
  • 1 onion, diced

  • Russet potatoes
  • Unsalted butter
  • Milk
  • Sour cream
  • Olive oil

Instructions:


  1. Prepare Potatoes: Peel and cut the Russet potatoes. Boil until tender, then mash with butter, milk, and sour cream. Set aside.

  • Bibb or butter lettuce leaves

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the diced onion and cook until tender, about 5 minutes.
  3. Stir in the minced garlic and grated ginger. Cook for about 1 minute until fragrant.
  4. Add the ground turkey and break it into smaller pieces. Cook until it’s no longer pink, about 5-6 minutes.

Turkey Quesadillas

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 red bell pepper, diced
  • 1 jalapeño, minced (optional)

  • 1 teaspoon cumin
  • 1 teaspoon paprika

  7. Place a flour tortilla in a clean, ungreased pan over medium heat.

Turkey Stuffed Zucchini Boats

Ingredients

  • 4 medium zucchini
  • 1 pound ground turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 green pepper, diced
  • 1 cup strained tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil

Instructions


  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.



  2. Cut the zucchini in half lengthwise and scoop out the flesh with a spoon. Chop the scooped-out flesh into small pieces and set aside.



  3. Place the zucchini halves cut-side down on the baking sheet. Bake for about 15 minutes, then let them cool.



  4. Heat olive oil in a large skillet over medium-high heat. Sauté the onion, garlic, and green pepper until soft.



  5. Add the ground turkey to the skillet. Use a wooden spoon to break it into smaller pieces. Cook until browned.



  6. Mix in the chopped zucchini flesh, strained tomatoes, Italian seasoning, salt, and pepper. Let it simmer for about 7 minutes, until thickened.

Turkey Lasagna

Ingredients:

  • 1 pound ground turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce
  • 12 lasagna noodles
  • 15 oz ricotta cheese
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt
  • Pepper

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray.
  2. Cook the lasagna noodles in a large pot of boiling salted water until al dente. Drain and set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 5 minutes.
  4. Add ground turkey to the skillet. Break it up as it cooks until no longer pink. Stir in minced garlic and cook for another minute.
  5. Pour the marinara sauce into the skillet. Season with salt and pepper to taste. Let it simmer for 10 minutes.
  6. In a bowl, mix ricotta cheese with the egg until well combined.
  7. Spread a thin layer of meat sauce on the bottom of the baking dish. Place a single layer of lasagna noodles on top.
  8. Spread half the ricotta mixture over the noodles. Sprinkle with 1 cup of mozzarella cheese.
  9. Repeat layers: meat sauce, noodles, ricotta, and mozzarella.
  10. Finish with a final layer of noodles, remaining meat sauce, and the last cup of mozzarella. Sprinkle grated Parmesan on top.
  11. Cover the dish with foil and bake for 25 minutes. Remove foil and bake for another 25 minutes until bubbly and golden.

Ingredients:

  • 1 lb ground turkey
  • 1-2 tsp oil (olive oil or your choice)
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar, Mexican blend, or your choice)
  • Tortilla chips
  • 1 cup pico de gallo
  • 1 can bean dip (optional)
  • Salt and pepper to taste
  • Sour cream and guacamole for serving

Instructions:


  1. Preheat your oven to 400°F (200°C).



  2. Heat the oil in a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon.

  • 1 teaspoon cornstarch
  • 2 teaspoons water
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon lime juice
  • 2 tablespoons brown sugar
  • 2 teaspoons sesame oil
  • 1/2 teaspoon chili sauce (optional)
  • 1/4 cup chopped scallions
  • 1 tablespoon sesame seeds for garnish

Instructions:

  1. Heat oil in a large skillet over medium-high heat.
  2. Add ground turkey, breaking it apart with a spatula. Cook until browned and fully cooked through.

  4. In the same skillet, add oil if needed, and cook the onion for 1 minute.

Instructions:

Turkey Meatball Subs

Ingredients:

  • Ground turkey
  • Bread crumbs
  • Parmesan cheese
  • Basil
  • Oregano
  • Parsley
  • Garlic salt
  • Egg
  • Olive oil
  • Steak spice
  • Sub rolls
  • Shredded cheese (mozzarella or your favorite kind)
  • Marinara sauce

Instructions:


  1. Preheat your oven to 425 degrees Fahrenheit.



  2. In a large bowl, mix ground turkey, bread crumbs, Parmesan cheese, basil, oregano, parsley, garlic salt, egg, olive oil, and steak spice.



  3. Form the mixture into 1 1/2-inch meatballs and place them on a greased cookie sheet.



  4. Bake the meatballs for 15 minutes or until they are cooked through.



  5. Preheat the broiler to high. Cut the rolls lengthwise and drizzle the inside of each with olive oil.

Turkey Enchiladas

Ingredients:

  • 1 lb ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups enchilada sauce
  • 1 cup sour cream
  • 8 large flour tortillas
  • 2 cups shredded cheese
  • 2 tablespoons olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the chopped onion and cook for 3-4 minutes until softened.
  4. Stir in the garlic and cook for 30 seconds more.
  5. Add the ground turkey to the skillet and cook until fully cooked, breaking it up as it cooks.
  6. Drain any excess grease from the skillet.
  7. Mix in the taco seasoning and cook for another minute.
  8. In a medium bowl, whisk together 2 cups of enchilada sauce and 1 cup of sour cream.
  9. Spread 1 cup of the enchilada sauce mixture on the bottom of a 9×13 inch baking dish.
  10. Place about 3/4 cup of the turkey mixture down the center of each tortilla.

Ingredients

  • 4 large portobello mushroom caps
  • 1 lb ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup fresh spinach, chopped (or kale)
  • 1 egg
  • 1/4 cup almond flour
  • 1/2 cup shredded cheese (optional)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.
  3. Clean and dry the portobello mushroom caps. Place them cap side down on the baking sheet.
