Greek Chicken Souvlaki

Enjoy the bright flavors of the Mediterranean with this simple and healthy Greek Chicken Souvlaki. Tender chicken marinated in a lemon-garlic mixture, grilled to perfection, and served with a refreshing homemade tzatziki sauce.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lemon
  • 1/3 cup olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic
  • 2 tsp dried oregano
  • 1 tsp dried parsley
  • 1 tsp kosher salt
  • ½ tsp ground black pepper
  • 1 medium cucumber
  • 2 tbsp fresh dill
  • 1 ½ cups Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • ½ tsp kosher salt
  • Metal skewers

Step 1: Preparing the Chicken

Cut the chicken breasts into strips.

Cut the chicken strips into 1 ½ inch cubes.

Step 2: Making the Marinade

Juice one lemon.

Add the cubed chicken to a mixing bowl.

Drizzle ⅓ cup olive oil over the chicken.

Add 2 tablespoons of lemon juice to the chicken.

Mince 3 garlic cloves and add to the bowl.

Add 2 teaspoons of dried oregano.

Add 1 teaspoon of dried parsley.

Add 1 teaspoon of kosher salt.

Add ½ teaspoon of ground black pepper.

Mix the chicken and marinade thoroughly.

Refrigerate the marinated chicken for at least 30 minutes.

Step 3: Making the Tzatziki Sauce

Grate a medium cucumber.

Drain the grated cucumber using a fine-mesh sieve or nut milk bag.

Chop 2 tablespoons of fresh dill.

Add 1 ½ cups of Greek yogurt to a mixing bowl.

Add the drained cucumber to the yogurt.

Add the chopped dill.

Mince 2 garlic cloves and add to the bowl.

Add 2 tablespoons of olive oil.

Add 1 tablespoon of fresh lemon juice.

Add ½ teaspoon of kosher salt.

Stir to combine all the tzatziki ingredients.

Refrigerate the tzatziki sauce.

Step 4: Assembling the Skewers

Thread 4-5 pieces of chicken onto each skewer.

Step 5: Grilling the Souvlaki

Heat a grill or grill pan to medium-high heat.

Grill the skewers for 3-4 minutes per side.

Continue grilling until the chicken is cooked through and has a nice char.

Transfer the cooked skewers to a plate.

Step 6: Serving

Transfer the tzatziki sauce to a serving bowl.

Prepare a side salad.

Place the skewers on a plate with the salad.

Serve with tzatziki sauce.

Tips

  • For best flavor, marinate the chicken for several hours or overnight.
  • Soak wooden skewers in water for at least 30 minutes before using to prevent burning.
  • Leftover chicken can be stored in an airtight container in the refrigerator for up to 5 days or frozen for up to 3 months.
