To make this tasty dish, you’ll need these roasted mushroom ingredients:

  • 500g/1lb of mushrooms (white button, Swiss brown/cremini, or large varieties like portabello)
  • 50g/3 tbsp of unsalted melted butter
  • 1 tbsp of olive oil
  • 2 finely minced garlic cloves
  • 1/2 tsp of salt
  • 1/2 tsp of pepper
  • Optional: 1 1/2 tbsp of lemon juice, 1 tsp of fresh thyme leaves or parsley

Mixing butter and oil for roasting makes the mushrooms tasty and even. If you can’t use garlic mushroom substitutes, you might like ghee or vegan butter. For something different, roast veggies like eggplant or zucchini. Just change the time they cook to be right.

Instructions

The first step is to preheat your oven. Set it to a high 220°C/450°F. If you have a fan-assisted oven, use 200°C/400°F. This makes sure your mushrooms turn out perfectly golden.

Then, grab your fresh mushrooms. Mix them well with melted butter, oil, garlic, salt, and pepper. This step ensures every mushroom is packed with flavor. Place them on a baking tray in a single layer. Don’t let them overlap. This way, they’ll roast evenly and won’t get mushy.

Now, it’s time to roast the mushrooms. Put the tray in the oven and let them cook for about 25 minutes. Don’t turn or toss them. This lets them get that nice golden color and the right texture. If you’re roasting big mushrooms, put them cap side down. You may also add more butter mix for extra juiciness.
