Easy Tuscan Chicken Recipe
Welcome to a flavor-packed journey with this Tuscan Chicken recipe! This dish has taken the internet by storm, and it’s not hard to see why.
With a creamy sun-dried tomato sauce and tender chicken, it’s as indulgent as it is simple to make. Let’s get started!
Ingredients You’ll Need
- 2 large chicken breasts (about 1.5 lbs)
- 1 tsp salt, divided
- 1/2 tsp black pepper, divided
- 1/2 tsp garlic powder
- 2 Tbsp olive oil, divided
- 1 Tbsp butter
- 8 oz mushrooms, thickly sliced
- 1/4 cup sun-dried tomatoes, drained and chopped
- 1/4 cup green onion, chopped
- 3 garlic cloves, minced
- 1 1/2 cups heavy whipping cream
- 1/2 cup parmesan cheese, shredded
- 2 cups fresh spinach
Step 1: Prep the Ingredients
Start by preparing all your ingredients. We need to slice and chop everything before cooking.

Slice eight ounces of mushrooms. You can use white or brown mushrooms.

Next, mince three garlic cloves. A little tip: smash the garlic with the side of your knife to easily peel it.

Now, chop about 1/4 cup of sun-dried tomatoes. If you haven’t used them before, they’re packed with intense flavor!
Step 2: Prepare the Chicken
Now it’s time to prep the chicken. You’ll want to cut your chicken breasts in half lengthwise to create four cutlets.

Ensure the cutlets are about the same thickness for even cooking.

Season both sides with salt, black pepper, and garlic powder.

Once seasoned, set your chicken aside while you heat the skillet.
Step 3: Sauté the Chicken
Heat a large skillet over medium heat and add one tablespoon of olive oil and a tablespoon of butter.

Add the seasoned chicken in a single layer and sauté for about 3 to 5 minutes on each side.

Make sure the internal temperature reaches 165°F for perfectly cooked chicken.

Step 4: Cook the Mushrooms
Transfer the chicken to a plate and add another tablespoon of oil to the pan.

Now, add your sliced mushrooms and sauté for 5 to 7 minutes until they are golden and softened.

The liquid released from the mushrooms will help deglaze the pan, bringing all those delicious bits into the sauce.
Step 5: Create the Sauce
Next, add the sun-dried tomatoes, green onion, minced garlic, and season with salt and pepper.

Sauté for about a minute until the garlic is fragrant.

Now, stir in the heavy cream and sprinkle the parmesan cheese over the top.

Step 6: Add the Spinach and Chicken
Bring the mixture to a light boil, then reduce the heat and let it simmer for a couple of minutes.

Finally, stir in the fresh spinach just until it starts to wilt.

Add the chicken back to the pan, spooning the sauce over the cutlets before serving.

Step 7: Serve and Enjoy!
Your Tuscan chicken is ready to enjoy! Garnish with fresh green onions for added flavor.

This dish pairs beautifully with pasta, rice, or even mashed potatoes.

Now, dig in and savor that creamy, flavorful goodness!
