Easy Pimento Cheese Dip

Get ready to meet your new obsession!

This pimento cheese dip is creamy, tangy, and has just the right amount of kick to keep everyone coming back for more.

It’s the kind of dip that disappears at parties and has people asking for the recipe before they’ve even finished their first bite.

What makes this version absolutely irresistible is the perfect balance of sharp cheddar and cream cheese, plus those sweet-tangy pimento peppers that give it that signature Southern flavor.

The secret?

Using freshly grated cheese instead of pre-shredded, and letting your cream cheese come to room temperature for the smoothest, most luxurious texture possible.

Ingredients

  • 2 cups freshly grated extra-sharp Cheddar cheese
  • 8 ounces cream cheese, cut into 1-inch cubes and softened at room temperature
  • 4 ounces pimento peppers, well drained and chopped if in strips
  • 2 tablespoons mayonnaise (Duke’s is traditional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground cayenne pepper (decrease or omit if sensitive to spice)
  • 1/2 medium jalapeño pepper, ribs and seeds removed, and minced (about 1 tablespoon; omit if sensitive to spice)
  • Freshly ground black pepper, to taste
  • Salt, to taste

Steps

  1. In a large mixing bowl or the bowl of your stand mixer, combine the cheddar, cream cheese, pimento peppers, mayonnaise, garlic powder, onion powder, cayenne pepper and jalapeño (if using), and several twists of black pepper. Make sure your cream cheese is truly softened – it should give easily when pressed with your finger. This prevents lumps and ensures a smooth, spreadable consistency.
  2. Beat the mixture together with a hand mixer, your stand mixer, or by hand with a sturdy wooden spoon or silicone spatula. Beat for 2-3 minutes until the mixture is thoroughly combined and creamy. If using a stand mixer, start on low speed to prevent ingredients from flying out, then increase to medium speed. The mixture should look uniform with no visible chunks of cream cheese.
  3. Taste, and add more black pepper if desired, and/or salt for more overall flavor (usually a pinch or two works perfectly). If you’d like your pimento cheese to have more of a kick, add another pinch of cayenne pepper. The flavors should be balanced – tangy from the cheese, sweet from the pimentos, and just spicy enough to tingle. Blend again for 30 seconds to incorporate any additions.
  4. Transfer the mixture to a smaller serving bowl using a silicone spatula to get every bit. Serve your pimento cheese immediately for a softer, more spreadable consistency, or chill it in the refrigerator for up to 1 week. Note that pimento cheese hardens as it cools; let it rest for 30 minutes at room temperature to soften before serving if it’s been refrigerated.

Smart Swaps

  • Greek yogurt instead of mayonnaise (1:1 ratio) – adds protein and tanginess
  • Pepper jack cheese instead of jalapeño – gives heat throughout every bite
  • Roasted red peppers instead of pimentos – adds smoky depth

Make It Diabetes-Friendly

Portion Control Tips:

  • Recommended serving size: 2 tablespoons (approximately 2 grams carbs per serving)
  • Best paired with: celery sticks, cucumber rounds, or bell pepper strips instead of crackers
  • Protein boost: Add 2 tablespoons chopped nuts to increase satiety

Lower-Carb Modifications:

  • Use full-fat cream cheese and mayonnaise – helps maintain stable blood sugar
  • Avoid serving with: traditional crackers or bread (adds 15-20 grams carbs per serving)
  • Smart dippers: pork rinds, cheese crisps, or vegetable chips reduce carb impact

Blood Sugar Management:

  • Total carbs per 2-tablespoon serving: approximately 2 grams
  • Best timing: as an appetizer before protein-rich meals
  • Fiber addition: serve with high-fiber raw vegetables to slow glucose absorption

Total Carb Count: Standard serving with crackers 18-22 carbs → With veggie dippers 4-6 carbs (75% reduction)

Pro Tips

  • Grate cheese using a food processor for perfectly even texture and faster prep
  • Let the dip sit for 1 hour before serving – flavors meld beautifully and taste even better
