Easy Greek Salad Recipe

This vibrant and refreshing Greek Salad, also known as Horiatiki, is a simple yet flavorful dish perfect for a light lunch, appetizer, or side.
With just a handful of fresh ingredients and a tangy homemade dressing, it’s a healthy and satisfying meal that’s easy to customize with added protein.
Ingredients
- 1 English cucumber
- 1 green bell pepper
- 1 pint grape tomatoes
- 1/2 medium red onion
- 1/2 cup pitted Kalamata olives
- 4 ounces Greek feta cheese (block)
- 1/3 cup red wine vinegar
- Juice of 1 lemon
- 1 teaspoon Dijon mustard
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 cup olive oil
- Optional additions: Cooked chicken breast, garbanzo beans or white beans, avocado

Step 1: Prepare the Cucumber
Slice the cucumber lengthwise, then slice across into half-moon shapes.

Add the sliced cucumber to a large mixing bowl.

Step 2: Prepare the Bell Pepper
Slice the top and bottom off the bell pepper and remove the seeds. Slice the bell pepper into strips, then across for a chunky dice. Include the edible parts around the stem.

Add the diced bell pepper to the mixing bowl.

Step 3: Prepare the Tomatoes and Onion
Slice the grape tomatoes in half.

Add the halved tomatoes to the mixing bowl.

Halve the red onion and remove the skin. Cut into thin wedges, slicing top to bottom through the root end. Gently separate the onion wedges.

Add the red onion to the mixing bowl.

Step 4: Prepare the Olives and Feta
Slice the Kalamata olives in half.

Add the sliced olives to the mixing bowl.

Cut the block of feta cheese into cubes or crumble it into large chunks.

Add the feta to the mixing bowl.

Step 5: Make the Dressing
In a separate bowl, whisk together the red wine vinegar, lemon juice, Dijon mustard, minced garlic, dried oregano, salt, and pepper.

Slowly drizzle in the olive oil while whisking continuously until emulsified.

Step 6: Assemble the Salad
Lightly toss the salad ingredients with a drizzle of the dressing. Reserve remaining dressing for individual servings.

Step 7: Prepare Optional Additions (Chicken or Beans)
For chicken: Drizzle chicken breast with olive oil and rub with basil, thyme, oregano, salt, and pepper. Bake at 425°F for 20-25 minutes. Let rest, then slice or chunk.

For beans: Drain and rinse canned garbanzo beans or white beans.

Dice avocado, if using.
Step 8: Serve
Serve the Greek Salad as is, or allow individuals to add chicken, beans, or avocado to their portions along with extra dressing.
