Main Ingredients:
- 1 bag (9.75 oz) Nacho Cheese Doritos, slightly crushed
- 3 cups cooked chicken, shredded or chopped
- 1 can (15 oz) black beans, drained & rinsed
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup salsa
- 1 cup frozen corn
- 2 cups shredded cheddar cheese (divided)
Seasonings:
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- Kosher salt & pepper to taste
For Garnish:
- Fresh cilantro, chopped
- Green onions, sliced

Steps

- Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish with cooking spray, ensuring complete coverage to prevent sticking.
- In a large mixing bowl, combine shredded chicken, black beans, cream of chicken soup, sour cream, salsa, frozen corn, 1 cup of the shredded cheese, and all seasonings. Mix until uniformly combined.
- Test the seasoning before adding salt – if using rotisserie chicken, it may already be well-seasoned
- The mixture should be creamy but not soupy – if too thick, add 2-3 tablespoons of milk
- Create the base layer by spreading half of the crushed Doritos in the prepared baking dish.
- Crush chips while still in the bag using gentle pressure – aim for pieces about 1-inch in size
- Too finely crushed chips will become soggy during baking
- Spread the chicken mixture evenly over the Dorito base.
- Use a spatula to spread to all corners
- Ensure an even layer for consistent baking
- Top with remaining crushed Doritos and the second cup of shredded cheese.
