Ingredients Needed

  • 1 English cucumber
  • 1 bell pepper (green preferred)
  • 1 pint of grape tomatoes
  • 1/2 medium red onion
  • 1/2 cup pitted Kalamata olives
  • 4 oz high-quality Greek feta cheese
  • For the dressing:
    • 1/3 cup red wine vinegar
    • Juice of 1 lemon
    • 1 teaspoon Dijon mustard
    • 2 minced garlic cloves
    • 1/2 teaspoon dried oregano
    • 1/4 teaspoon kosher salt
    • 1/4 teaspoon black pepper
    • 1/2 cup olive oil

Step 1: Prepare the Cucumber

Start by slicing the English cucumber. It’s best to leave the skin on for extra flavor.Slicing the cucumber

I realized halfway through that slicing lengthwise first would have been easier. Either way works, just get those slices into a bowl!Sliced cucumber in a bowl

Next, grab one bell pepper. I’m using green, but feel free to use any color you prefer.Slicing the bell pepper
