Ingredients Needed
- 1 English cucumber
- 1 bell pepper (green preferred)
- 1 pint of grape tomatoes
- 1/2 medium red onion
- 1/2 cup pitted Kalamata olives
- 4 oz high-quality Greek feta cheese
- For the dressing:
- 1/3 cup red wine vinegar
- Juice of 1 lemon
- 1 teaspoon Dijon mustard
- 2 minced garlic cloves
- 1/2 teaspoon dried oregano
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 cup olive oil
Step 1: Prepare the Cucumber
Start by slicing the English cucumber. It’s best to leave the skin on for extra flavor.
I realized halfway through that slicing lengthwise first would have been easier. Either way works, just get those slices into a bowl!
Once sliced, add the cucumber to a large mixing bowl.
Step 2: Chop the Bell Pepper
Next, grab one bell pepper. I’m using green, but feel free to use any color you prefer.
Slice off the top and bottom, remove the seeds, and chop it into chunky pieces.
