Instructions

1. Combine rice, broth, soup, garlic, salt, pepper, and onion in the Crockpot. Stir well, then place chicken breasts on top, slightly submerging them.

2. Cover and cook on HIGH for 3 to 4 hours, until rice has absorbed most liquid and chicken is cooked through.

3. Remove chicken to a plate and cover with foil. Add mixed vegetables to the pot and stir gently.
