Welcome to the world of crispy zucchini chips! If you’re looking for a fun and delicious way to use up all that summer zucchini, you’ve found the perfect recipe.
These zucchini crisps are not only easy to make but come with a garlic aioli that takes them to the next level.
Whether you fry, bake, or air fry them, these chips are sure to be a hit with everyone.
Let’s dive into the recipe!
Ingredients
- 2 medium green or yellow zucchini, sliced into 1/2″ thick rounds
- 1/2 cup flour for dredging
- 1 tsp salt
- 1/4 tsp black pepper
- 2 large eggs, beaten
- 1 1/2 cups Panko bread crumbs
- Oil for sautéing
For the Garlic Aioli Sauce:
- 1/3 cup mayonnaise
- 1 garlic clove, pressed
- 1/2 Tbsp lemon juice
- 1/4 tsp salt
- 1/8 tsp black pepper
Step 1: Prepare Your Assembly Line
We’re going to create our assembly line for the breading process.

In the first bowl, combine half a cup of flour with one teaspoon of salt and a quarter teaspoon of black pepper. Stir that together and set it aside.

In a second bowl, beat together two large eggs using a fork until well blended.

The third bowl will contain one and a half cups of Panko bread crumbs.

Now, let’s get our zucchini ready!

Step 2: Bread the Zucchini
Slice your zucchini into half-inch thick rounds, discarding the ends.

Now, we’ll start the breading process. Dredge each zucchini piece in flour and tap off the excess.

Next, dip it in the beaten egg, letting any excess drip back into the bowl.

Finally, coat it in the breadcrumbs, ensuring an even layer.

Transfer the breaded zucchini to a baking sheet or platter.

Step 3: Cook the Zucchini Chips
Heat a large heavy skillet over medium heat and add about a quarter inch of oil.

Make sure the oil is hot enough; you can test it by adding a breadcrumb to see if it sizzles.

Cook the zucchini in batches, keeping them in a single layer, for about two minutes per side until golden brown and crispy.

Once cooked, place them on a rack to keep them crispy.

Sprinkle with kosher salt as soon as they come off the heat.

Step 4: Bake or Air Fry Option
If you prefer a healthier option, spray both sides of the zucchini with cooking spray and bake at 425°F for 18-20 minutes, flipping halfway.

For air frying, spray both sides and air fry at 370°F for 10-13 minutes without flipping.

Whichever method you choose, they will be delicious and crispy!

Now, let’s make that garlic aioli sauce!
Step 5: Make the Garlic Aioli Sauce
In a bowl, combine 1/3 cup mayonnaise with a pressed garlic clove.

Add in half a tablespoon of fresh lemon juice, being careful to use fresh juice for the best flavor.

Then, sprinkle in a quarter teaspoon of salt and some black pepper to taste.

Stir it all together until well combined.

If you’re serving a bigger crowd, double the sauce because it will disappear fast!

Step 6: Enjoy Your Zucchini Chips!
Serve the crispy zucchini chips hot with the garlic aioli on the side.

These chips are best enjoyed fresh while they’re still crispy.

Whether you fry, bake, or air fry, these zucchini chips are sure to impress!
