Ingredients
- 1 cup medium grain rice
- 2 cups water
- 2 teaspoons Knorr chicken bouillon powder
- 1 medium lime (for zest and juice)
- 2-3 tablespoons fresh lime juice
- 1/3 cup diced onion
- 2 cloves garlic, minced
- 1/4 cup fresh cilantro leaves, chopped
- 3-4 cilantro stems
- 1 scallion (optional)
- 2 tablespoons grapeseed oil (or oil of choice)

Step 1: Prepare the Aromatics
Remove zest from lime, avoiding white pith

Squeeze fresh lime juice from the lime
