Ingredients

  • 16 ounces linguine or spaghetti, cooked and drained
  • 1 pound boneless, skinless chicken breast or 2 cups shredded cooked chicken
  • 1/4 cup butter
  • 3 cloves garlic, minced
  • 8 ounces button mushrooms, sliced
  • 1/2 cup chicken broth or white wine
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 2 cups sour cream, room temperature
  • 1/2 cup frozen peas, thawed
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste
  • 2 cups shredded mozzarella cheese
  • Fresh chopped parsley, for garnish

Instructions

Chicken Tetrazzini

1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13 inch casserole dish.

2. Cook pasta to al dente, drain, and set aside. If using raw chicken, cook until done and shred.

3. Melt butter in a large skillet over medium heat. Add garlic and cook until fragrant.

4. Add mushrooms and cook for 5 minutes until tender and browned.

5. Reduce heat to low, add broth or wine, and cook for 1 minute.

6. Stir in soups, sour cream, peas, and Parmesan cheese. Add pasta and chicken, tossing to coat.

7. Season with salt and pepper to taste.

8. Pour half the mixture into the casserole dish. Sprinkle with 1 cup mozzarella.

9. Add remaining pasta mixture and top with remaining mozzarella.

10. Cover with foil and bake for 30 minutes. Remove foil and bake 10-15 minutes more until golden.

11. Let cool for 5-10 minutes before serving. Garnish with fresh parsley.
