  • 2-3 boneless, skinless chicken breasts

  • 2 tablespoons olive oil, divided
  • 2 tablespoons butter
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1/2 cup white wine (optional)
  • 1 1/2 cups chicken broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh parsley

Instructions

Chicken Stroganoff

1. Season chicken breasts with salt, pepper, garlic powder, onion powder, and paprika.

2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side until golden and cooked through. Remove and set aside.

3. In the same skillet, heat remaining olive oil and butter. Add onion and sauté for 3-4 minutes until softened.

4. Add garlic and mushrooms. Cook for 4-5 minutes until mushrooms are tender.

5. If using, add white wine to deglaze the pan. Simmer for 2-3 minutes until slightly reduced.

6. Sprinkle flour over the mushroom mixture and stir to combine.

7. Gradually pour in chicken broth, stirring continuously to avoid lumps.

8. Add Dijon mustard, Worcestershire sauce, salt, pepper, smoked paprika, and thyme. Simmer for 5-7 minutes until sauce thickens.

9. Cut chicken into bite-sized pieces and return to the pan. Simmer for 2-3 minutes to absorb flavors.

10. Turn off heat and stir in sour cream until sauce is smooth and creamy.

11. Sprinkle with fresh parsley and serve hot.
