For the Pasta Bake:
- 300g rigatoni pasta
- 5 slices streaky bacon
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 1/2 tsp dried oregano
- 1/2 tsp chili flakes
- 1/2 cup dry white wine
- 2 tbsp tomato paste
- 700g tomato passata
- 3 fresh tomatoes, cut into wedges
- 2 cups baby spinach
- 2 cups mozzarella cheese
- 1/2 cup parmesan cheese

Steps

- Preheat oven to 180°C/350°F. Cook pasta in salted water until al dente. Drain and set aside.
- Toss chicken with seasonings. Cook bacon until crispy, remove and chop.
- In bacon fat, cook seasoned chicken until golden. Remove and set aside.
- Sauté onion and garlic in same pan, add herbs and wine. Reduce wine, add tomato paste.
- Pour in passata, return chicken, simmer 5 minutes.
- Mix in spinach, tomatoes, pasta, and bacon. Transfer to baking dish.
- Top with cheeses and bake 25 minutes until golden and bubbly.
- Let rest 5 minutes before serving.
