Breakfast Casserole

This hearty breakfast casserole is a perfect addition to any holiday morning or brunch gathering. Made with savory sausage, potatoes, and a blend of cheeses, this dish is sure to satisfy everyone at the table.
Ingredients
- 2 cups diced hash browns (255g)
- 1 pound breakfast sausage
- 1 cup diced onion (1 medium)
- 1 cup diced red bell pepper
- 2 teaspoons minced garlic
- 8 ounces shredded sharp cheddar cheese (2 cups, 226g)
- 12 large eggs
- ¾ cup heavy cream
- ¼ cup milk
- 5 drops Tabasco sauce
- ¼ teaspoon ground black pepper
- ½ teaspoon table salt
- ⅛ teaspoon ground nutmeg (optional)
- Butter, for greasing the dish

Step 1: Preheat and Prep
Preheat oven to 375F (190C).
Lightly grease the sides and bottom of a 13×9” (33x22cm) baking dish with butter.

Spread diced potatoes evenly over the bottom of the prepared dish. Set aside.

Step 2: Cook the Sausage
In a skillet over medium/high heat, cook sausage until browned, crumbling as you go.

When cooked through, remove the sausage with a slotted spoon to the baking dish (to drain the oil).

Layer the cooked sausage over the potatoes.

Step 3: Sauté Vegetables
Using the same skillet, cook pepper and onion over medium heat, stirring frequently, until softened (about 5 minutes). Add butter or oil if needed.


Step 4: Add Garlic and Cheese
Add garlic and cook until fragrant, about 30 seconds.

Add the pepper, onion, and garlic mixture over the sausage in the baking dish.

Sprinkle cheese into the baking dish.

Gently stir everything together until ingredients are well dispersed.

Step 5: Prepare Egg Mixture
In a separate, large mixing bowl, vigorously whisk the eggs until well combined.

Add milk, cream, Tabasco, pepper, nutmeg, and salt to the eggs.

Whisk until well combined.

Step 6: Assemble and Bake
Pour the egg mixture evenly into the baking dish.

Transfer to the center rack of the preheated oven and bake for 40-45 minutes, until edges are set and the very center is only slightly jiggly.

Step 7: Cool and Serve
Allow the casserole to cool for 10 minutes before serving.
