Better than Pizza Sheet Pan Casserole | Easy & Quick Dinner Casserole Recipe

This sheet pan casserole offers a healthier, lower-carb alternative to traditional pizza, packed with fresh vegetables and a flavorful egg base. It’s a quick and easy dinner option that satisfies pizza cravings without the guilt.

Ingredients

  • 2/3 cup all-purpose flour (or almond flour for lower carb)
  • 1 teaspoon baking powder
  • 1/4 – 1/2 teaspoon salt (optional)
  • 1/4 teaspoon black pepper
  • 6 large eggs
  • 1/2 cup heavy cream (or whole milk)
  • 1/3 cup grated Parmesan cheese
  • Garlic powder (to taste)
  • Onion powder (to taste)
  • Italian herbs (to taste)
  • 8 oz low moisture mozzarella cheese, shredded
  • 2-3 medium tomatoes, sliced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 1 cup mushrooms, sliced
  • Olive oil
  • Cooking oil
  • Parchment paper
  • Crushed red pepper flakes (for garnish)

Step 1: Prep Vegetables

Slice tomatoes, onions, bell pepper, and mushrooms.

Step 2: Prepare the Batter

Crack six eggs into a bowl and whisk.

Add heavy cream (or milk) and whisk.

Add garlic powder, onion powder, Italian herbs, and Parmesan cheese. Mix well.
