Best Ever Mexican Street Corn Recipe

Hello friends! Today, I’m showing you how to make Mexican street corn. These are very easy to make and so, so delicious. Let’s get started!

Ingredients

  • 4 corn on the cob
  • 1/4 cup mayonnaise
  • 1/4 sour cream
  • juice from 1 lime
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste
  • 1/4 tsp cayenne pepper
  • 1/2 tsp Italian seasoning
  • 1/2 cup cotija cheese or feta cheese

Introduction to making Mexican street corn

We’ll begin by cooking some fresh corn. I have a big pot of water boiling over medium heat. I’m going to drop four pieces of corn into the boiling water and cook them for about seven minutes.

After the corn has cooked, take it out of the boiling water and set it onto a plate lined with a paper towel. This way, all the water can drain off the corn. Next, allow the corn to sit for about five minutes to cool down a little.

In the meantime, in a small bowl, combine 1/4 cup of mayonnaise and 1/4 cup of sour cream. Then, cut and squeeze in the juice from one whole lime. Go ahead and mix everything together very well, and set the mixture aside for later.

In a separate bowl, mix together 1 teaspoon of paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, half a teaspoon of Italian seasoning, 1/4 teaspoon of cayenne pepper, and salt and black pepper to taste. Stir all the spices together very well.

Now, let’s put everything on the corn. Get the cream mixture we made and put a generous amount onto each corn.

Next, brush the cream onto the corn, making sure to get it on all sides.

Once the corn has been very well creamed, we’re going to add some cheese. I’m using about half a cup of grated cotija cheese, but you can also use feta. Go ahead and sprinkle the cheese all around each corn.

Next, grab the spice mixture we made and sprinkle that all over each corn. Finish with some freshly chopped cilantro or parsley.

Now, this delicious Mexican street corn is ready to be enjoyed! These came out so good. I served them with some sweet and spicy chicken and sautéed rice.
