Best Ever Meatloaf

This classic meatloaf recipe is easy, comforting, and perfect for leftovers. It features a flavorful blend of ground beef, fresh herbs, and a delicious glaze, resulting in a moist and tender meatloaf that’s sure to become a family favorite.

Ingredients

  • 1 small onion
  • 4 garlic cloves
  • 2 tablespoons flat-leaf parsley
  • 2/3 cup quick-cooking oats
  • 2 pounds 85% ground beef
  • 2 eggs
  • 3 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1/3 cup milk (dairy or non-dairy)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon Worcestershire sauce (for glaze)
  • 1 tablespoon coconut sugar or brown sugar (for glaze)

Step 1: Prepping the Ingredients

Finely dice the onion.

Smash and peel the garlic cloves.

Step 2: Combining the Meatloaf Mixture

Add ground beef to a mixing bowl.

Add diced onion to the bowl.

Mince garlic cloves directly into the bowl.

Add eggs to the bowl.

Add ketchup to the bowl.

Add Worcestershire sauce to the bowl.

Add quick-cooking oats.

Add milk.

Add chopped parsley.

Add Italian seasoning.

Add kosher salt.

Add ground black pepper.

Mix all ingredients together with your hands until well combined.

Step 3: Shaping and Glazing the Meatloaf

Transfer the meatloaf mixture to a rimmed baking sheet or casserole pan.

In a small bowl, combine Worcestershire sauce, coconut sugar/brown sugar, and ketchup for the glaze.

For a chunkier texture, use rolled oats instead of quick-cooking oats.

You can substitute steak sauce for Worcestershire sauce in the glaze.

For a lighter option, serve the meatloaf with mashed sweet potatoes or mashed cauliflower instead of mashed potatoes.

Store leftover meatloaf in the refrigerator for up to 3-4 days or freeze for up to 3 months. For freezing, slice the meatloaf before freezing and thaw individual slices overnight in the refrigerator before reheating.
