Best Country Breakfast Skillet (Breakfast for Dinner)

This hearty breakfast skillet is a perfect weekend treat or a quick and easy weeknight dinner. Packed with flavor and customizable to your liking, it’s sure to become a family favorite.

Ingredients

  • Bacon, sliced (amount to your preference)
  • 1 large potato
  • Water, for soaking potatoes
  • Bacon grease, reserved from cooked bacon
  • Canola oil (or other cooking oil), if needed
  • Your preferred seasoning blend
  • 1 Onion, diced
  • 1 Bell pepper, diced
  • Salt, to taste
  • Black pepper, to taste
  • 4 Eggs
  • Shredded cheese (amount to your preference)
  • Green onions, chopped (for garnish)

Step 1: Prepare the Ingredients

Slice the bacon into your desired size.

Cut the potato into cubes using a potato slicer. Place the cubed potatoes in a bowl of cold water to prevent oxidation.

Step 2: Cook the Bacon

Cook the bacon slices in a large skillet until crispy. Remove the bacon from the skillet and set aside, reserving the bacon grease.

Step 3: Cook the Potatoes

Drain and rinse the potatoes. Dry them thoroughly with a paper towel.

Add the potatoes to the skillet with the reserved bacon grease. If needed, add a tablespoon or two of canola oil. Season the potatoes with your favorite seasoning.

Step 4: Add Onions and Bell Peppers

Add the diced onions to the skillet and cook until they begin to soften. Add the diced bell peppers and continue cooking.

Step 5: Season and Cook Vegetables

Season the vegetables with additional seasoning, salt, and pepper. Cook until the vegetables reach your desired tenderness.

Step 6: Add Bacon and Create Wells for Eggs

Add the cooked bacon back to the skillet. Create four small wells or indentations in the potato and vegetable mixture.

Crack an egg into each well. Season the eggs with pepper. Cover the skillet and let the eggs cook to your desired doneness. If you prefer, break the yolks with a fork before covering.
