Best Country Breakfast Skillet (Breakfast for Dinner)

- Bacon, sliced (amount to your preference)
- 1 large potato
- Water, for soaking potatoes
- Bacon grease, reserved from cooked bacon
- Canola oil (or other cooking oil), if needed
- Your preferred seasoning blend
- 1 Onion, diced
- 1 Bell pepper, diced
- Salt, to taste
- Black pepper, to taste
- 4 Eggs
- Shredded cheese (amount to your preference)
- Green onions, chopped (for garnish)

Step 1: Prepare the Ingredients
Slice the bacon into your desired size.

Cut the potato into cubes using a potato slicer. Place the cubed potatoes in a bowl of cold water to prevent oxidation.

Step 2: Cook the Bacon
Cook the bacon slices in a large skillet until crispy. Remove the bacon from the skillet and set aside, reserving the bacon grease.

Step 3: Cook the Potatoes
Drain and rinse the potatoes. Dry them thoroughly with a paper towel.

Add the potatoes to the skillet with the reserved bacon grease. If needed, add a tablespoon or two of canola oil. Season the potatoes with your favorite seasoning.
