Steps

Bagel Breakfast Sandwich
  1. Toast your bagel to a golden brown, about 3-4 minutes. Look for light browning on the cut sides for the perfect crunch.
  2. Heat a large nonstick skillet over medium-high heat (about 375°F/190°C). Add ½ tablespoon butter and swirl to coat the pan completely.
  3. Once butter is fully melted and bubbling (but not brown), crack 2 eggs into the pan. Season with a pinch of kosher salt. Watch for the whites to become opaque around the edges (2-3 minutes).
  4. Carefully flip the eggs using a thin spatula. Reduce heat to medium-low (about 300°F/150°C) to prevent overcooking.
  5. Immediately layer both cheese slices on top of the eggs. The residual heat will melt them perfectly.
  6. Place ham slices on the empty side of the skillet for 30-45 seconds per side until lightly browned and warm.
  7. Layer the warmed ham over the melting cheese. Turn off heat.
  8. On the bottom bagel half, spread and mash ½ avocado. Sprinkle with kosher salt to enhance flavor.
  9. Transfer the ham-egg-cheese stack onto the avocado layer.
  10. Spread 1 tablespoon sriracha sauce on the top bagel half and complete your sandwich.
