This rustic Italian-inspired dish is not only easy to make but also budget-friendly and customizable to suit your taste preferences.
Ingredients
- 8 ounces precooked sausage (about 3 links), sliced into thin rounds
- 1/2 tablespoon oil (if needed)
- 1/2 large onion, sliced into thin wedges
- 2 cloves garlic, sliced
- 1 teaspoon oregano
- 1/2 teaspoon red pepper flakes
- 2 (15-ounce) cans cooked white beans, drained and rinsed
- 1 (14-15 ounce) can diced or crushed tomatoes
- 8 cups raw chopped kale
- Salt and pepper, to taste
- Optional: Grated Parmesan cheese for serving
Instructions
1. Heat a large pot or pan over medium-high heat. If using lean sausage, add 1/2 tablespoon of oil to the pan.
2. Add the sliced sausage to the pan and brown on both sides, about 2-3 minutes per side.
3. Add the onions to the pan and sauté for about 2 minutes, until they begin to soften.
4. Stir in the garlic, oregano, and red pepper flakes. Sauté for an additional 30 seconds until fragrant.
5. Add the drained and rinsed white beans and canned tomatoes to the pot. Stir well to combine.
6. Cook for about 5 minutes, stirring occasionally, to allow the flavors to meld and remove any tinny taste from the canned tomatoes.
7. Place the chopped kale on top of the mixture and cover the pot with a lid. Cook for 8-10 minutes, or until the kale has wilted.
8. Remove the lid and stir to combine the kale with the rest of the ingredients. Cook for an additional 1-2 minutes if needed.
9. Taste and adjust seasoning with salt, pepper, and additional red pepper flakes if desired.
10. Serve hot, optionally topped with grated Parmesan cheese.
