4-Ingredient French Onion Crock Pot Pot Roast

Ingredients

  • 1 to 1 1/2 pound pot roast, sliced part way through
  • 1 packet dry onion soup mix
  • 1/2 cup beef broth or stock
  • 1 can French Onion soup
  • Optional: 6 medium potatoes, diced
  • Optional: 3 large carrots, chopped
  • Optional: 1 medium onion, diced

Instructions

1. Prepare the pot roast by cutting about 2/3 of the way through, every 3/4 inches.

2. If using vegetables, wash and dice them into chunks. Peeling is optional.

3. Grease the bottom of your crockpot and layer with potato wedges if using.

4. Place the pot roast in the center of the crockpot, surrounding it with remaining vegetables if desired.

5. Pour the beef broth over the roast and vegetables.

6. Sprinkle the dry onion soup mix evenly over the contents of the crockpot.

7. Pour the can of French onion soup over everything in the crockpot.

8. Cover the crockpot and cook on low heat for 7 to 8 hours.
