Ingredients
- 1 (16-ounce) bag mixed baby bell peppers
- 1 pound potato gnocchi (fresh, shelf-stable, or frozen)
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 pound uncooked spicy Italian sausages
- Chopped fresh parsley leaves, for garnish (optional)
Instructions
1. Preheat the oven to 400ºF and arrange a rack in the middle.
2. Cut the bell peppers into 1-inch chunks and place on a rimmed baking sheet.
3. Add the gnocchi to the baking sheet with the peppers.
4. Drizzle olive oil over the peppers and gnocchi, then season with salt and pepper. Toss well to combine.
5. Spread the mixture into an even layer on the baking sheet.
6. Remove sausage casings if necessary, then drop bite-sized pieces of sausage over the gnocchi mixture.
