25-Minute Chicken Caesar Salad

Ingredients

  • 8 raw chicken tenders
  • 4 heads of little gem lettuce (or romaine)
  • 20g (1.5 tbsp) olive oil (for cooking the chicken)
  • 50g (1/4 cup) olive oil (for the dressing)
  • 150g (1.5 cups) panko breadcrumbs
  • 20g (4 tsp) chopped capers
  • Grated parmesan cheese
  • 1 large egg
  • 45g (1/2 cup) grated parmesan cheese (for dressing)
  • 30g (1 can) oil-packed anchovies (rinsed)
  • 1 clove garlic
  • 50g (3.5 tbsp) lemon juice
  • 10g (2 tsp) water
  • 275g (1.25 cups) neutral oil (canola, light olive oil, avocado, etc)

Step 1: Prepare the Chicken Tenders
