15-Minute Shrimp Tacos

These easy shrimp tacos come together in just 15 minutes and are perfect for a quick weeknight dinner. Serve them with your favorite toppings and sides for a complete meal.
Ingredients
- 2 lbs large shrimp, peeled, cleaned, deveined
- 1/2 green bell pepper
- 1/2 red bell pepper
- 1/2 red onion
- Mantra chicken seasoning (to taste)
- Lemon pepper seasoning (to taste)
- Onion powder (to taste)
- Granulated garlic powder (to taste)
- Smoked paprika (to taste)
- Maggie seasoning sauce (to taste) or soy sauce
- Cooking oil
- 2 tbsp butter
- Fresh parsley, for garnish
- Corn tortillas
- Shredded mozzarella cheese

Step 1: Season the Shrimp
Season the shrimp with mantra chicken seasoning, lemon pepper seasoning, onion powder, granulated garlic powder, smoked paprika, and Maggie seasoning sauce (or soy sauce).

Combine the shrimp and seasonings, ensuring the shrimp is evenly coated.

Step 2: Sauté the Vegetables
Preheat a large cast iron skillet over high heat.

Add cooking oil to the hot skillet.

Add the diced onions and bell peppers to the skillet and sauté.

Step 3: Cook the Shrimp
Add the seasoned shrimp to the hot skillet, spreading it out in a single layer.

Cook the shrimp for a few minutes per side, or until pink and opaque.

Step 4: Finish the Shrimp
Turn off the heat and add the butter to the skillet, letting the residual heat melt it.

Stir to coat the shrimp and vegetables in the melted butter.

Garnish with fresh parsley.

Step 5: Prepare the Tacos
Heat corn tortillas on a griddle or in a separate pan with hot oil until softened.

Add shredded mozzarella cheese to one half of each tortilla.

Spoon the shrimp mixture over the cheese.

Top with more cheese.

Fold the tortillas in half.

Step 6: Crisp the Tacos (Optional)
Cook the folded tacos on the griddle until the cheese is melted and the tortillas are crispy.

Serve immediately.
